SHOO-FLY PIE

Pastry for a 1-crust pie

Crumb mixture:
1 1/2 c all purpose flour
1/2 c brown sugar, firmly packed
Pinch of salt
1/2 tsp cinnamon
Big pinch each ginger and nutmeg
1/4 c soft butter

Filling:
1/2 tsp baking soda
1/2 c molasses
1/2 c boiling water
2/3 of crumb mixture

Line an 8-inch pie pan with pastry. Refrigerate while you prepare the crumb mixture and filling. Combine flour with brown sugar, salt, and spices. Pinch in the butter until the mixture looks mealy. Set aside. Stir baking soda and molasses into boiling water. Add 2/3 of the crumb mixture and pour into the unbaked pie shell. Sprinkle top with remaining crumbs and bake in a preheated 375 degree oven for 30 - 40 minutes or until crust and crumbs are golden brown.

Tostada: corn tortilla, guacamole, home cooked pinto beans no-salt, salsa, cruciferous crunch from Trader Joes (kale, broccoli, Brussels sprouts, red cabbage, green cabbage). The cruciferous crunch give a nice crunch to the tostada.

I'll keep my eyes open for those grapes. Last summer I bought tons of Lean Cuisine and they were great.

Russian Salad {{ has carrots, potatoes, green beans, peas, beets, scallions, mayo, French dressing }} you combine these at different times cause they're cooked for diff times plus mariate time.

I've been feeling like I haven't been getting enough fruits and veggies lately, and too much fattening stuff, so today I had a smoothie bowl for lunch.
It had acai, blueberries, bananas, strawberries (all frozen), spinach, coconut water, and spirulina. I put some pumpkin seeds, crumbled dark chocolate, and coconut flakes on top. It was so good!

Mystery Fruit Thing

2 ripe bananas, thinly sliced
3 Red Delicious apples, cored and cut in very thin slices about the size of a nickel
3 Tablespoons plain yogurt
3 Tablespoons wheat germ
6 Tablespoons honey
2 Tablespoons butter
2 Tablespoons lemon juice

1. Preheat the oven to 300 degrees
2. Place one quarter of the banana slices and apple pieces in the bottom of a baking dish or casserole. Sprinkle with one T. yogurt and 1 T. wheat germ. Drizzle with 2 T. honey.
3. Top with another quarter of the fruits, another T. yogurt and wheat germ and 2 T. honey and so on, ending with fruit layer.
4. Dot with the butter and sprinkle with the lemon juice. Bake 30 minutes. Eat warm or cooled.

Yield: 4 servings

Fresh Orange Salad emoticon
The New York Times Natural Foods Cookbook by Jean Hewitt

2 navel oranges
1 grapefruit
Freshly ground black pepper
Sea salt to taste
1/3 to 1/2 cup olive oil
2 Tablespoons chopped walnuts
Salad greens
Warm whole wheat bread (preferably home-made)

****************************************

1. Peel and section the oranges and grapefruit. Cut each section into two or three pieces and place in a salad bowl. Add all the juice.
2. Add about two turns of the pepper mill and salt to taste. Pour the oil over all, toss and chill.
3. Sprinkle with the nuts and serve on salad greens, with warm whole wheat bread.

Yield: 3 servings.

I was going to make a kale salad because I have a ton of it growing in my yard. Iit's been raining like crazy and now it is raining again and I didn't want to get wet picking kale.
So, I had a lettuce salad with onion, tomato, and crumbled up homemade veggie burgers. Oh, and sauerkraut too! It was really good!

Gardein chick'n fiesta skillet meal with some Daiya pepper jack shreds. This was my first time trying one of the Gardein skillet meals and I wasn't overly impressed, which is sad because typically I love Gardein products.

I met up with a friend today for coffee and I had a vegan energy bar too (freshly made and so delicious!).
Then we went to a lunchtime "dance". It was very cool - they serve sandwiches and everybody dances for an hour. I had a great time dancing, but everything had meat and cheese (except PB and J, which i didn't want), so when I got home I had a mason jar salad that i prepared a couple of days ago.
It had chickpeas and quinoa and a homemade maple-mustard dressing.

I made some lentil veggie burgers the other night and I've been eating them every day since.
Today I made a lettuce burger (just replacing the bread with lettuce). It had cuke, tomato, and some fresh sprouts I bought at the farmer's market yesterday. Also some fat-free green goddess dressing (homemade).
I had some baked potato wedges with a little cashew queso on the side.
