Fresh Orange Salad emoticon
The New York Times Natural Foods Cookbook by Jean Hewitt

2 navel oranges
1 grapefruit
Freshly ground black pepper
Sea salt to taste
1/3 to 1/2 cup olive oil
2 Tablespoons chopped walnuts
Salad greens
Warm whole wheat bread (preferably home-made)

1. Peel and section the oranges and grapefruit. Cut each section into two or three pieces and place in a salad bowl. Add all the juice.
2. Add about two turns of the pepper mill and salt to taste. Pour the oil over all, toss and chill.
3. Sprinkle with the nuts and serve on salad greens, with warm whole wheat bread.

Yield: 3 servings.

I was going to make a kale salad because I have a ton of it growing in my yard. Iit's been raining like crazy and now it is raining again and I didn't want to get wet picking kale.
So, I had a lettuce salad with onion, tomato, and crumbled up homemade veggie burgers. Oh, and sauerkraut too! It was really good!

Gardein chick'n fiesta skillet meal with some Daiya pepper jack shreds. This was my first time trying one of the Gardein skillet meals and I wasn't overly impressed, which is sad because typically I love Gardein products.

I met up with a friend today for coffee and I had a vegan energy bar too (freshly made and so delicious!).
Then we went to a lunchtime "dance". It was very cool - they serve sandwiches and everybody dances for an hour. I had a great time dancing, but everything had meat and cheese (except PB and J, which i didn't want), so when I got home I had a mason jar salad that i prepared a couple of days ago.
It had chickpeas and quinoa and a homemade maple-mustard dressing.

I made some lentil veggie burgers the other night and I've been eating them every day since.
Today I made a lettuce burger (just replacing the bread with lettuce). It had cuke, tomato, and some fresh sprouts I bought at the farmer's market yesterday. Also some fat-free green goddess dressing (homemade).
I had some baked potato wedges with a little cashew queso on the side.

Sounds great!

My fridge is bare right now since we traveled last weekend. For lunch I simply made some quinoa with balsamic dressing, some garlic and basil leaves....not too exciting. We don't even have tomatoes or greens to add! Oh well, it's only one day and better than take out!

"Rice Fried Vegetables" - and old recipe I got from Vegetarian Times. It has sesame oil, green onion, ginger, carrots, broccoli, asparagus, peas, slivered almonds, brown rice, soy sauce, sriracha sauce, and then I add baked, marinated tofu that I flavored with soy sauce, sriracha sauce, sesame oil and garlic. (The original recipe uses eggs, but since I'm doing the vegan thing, I sub out the eggs with tofu.)

It's really filling.

I've been rotating my daily sandwiches between vegan deli slices and veggies and chickpea salad.
Today I had the slices with both avocado and hummus (trying to pack in some calories!).
I always put in grapes or cherries and some snap peas on the side.

I had an orange and some trail mix as snacks.

Thank goodness for freezer meals, right?

Today's lunch is cereal again. I quite enjoyed it yesterday for the simplicity. We lost power at school for over an hour right during the lunch hour. I was able to eat my cereal and still provide extra hallway support for kids.

I have a concert at 1.30 today with fourth and fifth graders so I will need something quick, easy and light. I hate having something heavy in my stomach before a performance.

LOL I get into the same kind of ruts.

I had a hodge podge of items for lunch. Celery with PB2, Almonds, dried mango, mashed avocado with olives and cucumber with rice vinegar. Odd, I know but incredibly satisfying. I had a banana for a morning snack and I still have an apple for this afternoon if I would like it.

I love chickpea salad! I haven't made any in a while, so I'll have to make some soon.
I will be going to the Mojave Desert next week to do archaeology, which means I will need to pack sandwiches every day. I'll have to pack the ingredients for that!

Today I had leftover pasta with cashew alfredo sauce and 1/2 a homemade veggie burger and a tiny salad.
I usually eat more salad, but I need to go grocery shopping!

My car is in the shop so I was working from home today and made myself two Gardein chick'n tenders on a small tortilla with daiya, lettuce, tomato, purple onion, veganaise, and Matouk's calypso sauce. It was a fabulous lunch and I didn't really notice a difference from using real mayo or real cheese.
