I have found pinterest to be my biggest helper with vegan meals. This roasted red bell pepper sauce is a big hit in our house. Kid approved!

One of my faves is tahini rotini from fatfreevegan.com. The sauce is almost like a thinned hummus. I'm thinking about trying hummus as a pasta salad dressing.

My favorite vegan pasta recipe is as follows:

5 or 6 garden fresh tomatoes, chopped
2 or 3 garlic cloves, minced
fresh basil
2 or 3 tablespoons olive oil
cooked spaghetti (or other pasta)

Cook the spaghetti and drain. Toss with the tomatoes, garlic, basil and oil. Salt and pepper to taste. Parmesan cheese if you eat cheese before eating. It will make a large bowl. It can be eaten warm or cold. My family loves it cold from the refrigerator. Perfect for a summer lunch or snack. When the tomatoes and basil are straight from the garden it is best.

Something we eat fairly regularly is pasta (typically fusilli) with peas (340g), tossed in asparagus sauce, topped with roasted cauliflower. The hardest part is waiting on the cauliflower.

I steam the asparagus and peas together, for sake of time and clean-up, then pluck the asparagus from the colander, leaving peas, to prepare sauce. Everything is frozen because, despite menu planning, I am fickle when it comes time to actually cook XD
