Spoon Bread

3 cups milk
1 Cup stoneground yellow corn meal
1 teaspoon sea salt
1 teaspoon baking powder
1 Tablespoon raw sugar
2 Tablespoons oil
3 eggs, separated

1/ Preheat the oven to 350 degrees
2. Heat 2 cups of the milk in a saucepan. When milk begins to simmer, add the corn meal and continue to cook, stirring until mixture is thick.
3. Remove from the heat and add salt, baking powder, sugar, oil and remaining cup of milk. Beat the egg yolks lightly and add to corn meal mixture.
4. Beat the egg whites until stiff but not dry and fold the into corn meal mixture. Turn into a buttered two-quart souffle dish and bake one hour or until well puffed and brown on top.
5. Serve by the spoonful directly from the dish and top with butter.

Yield: 6 - 8 servings.

This recipe is from one of my cookbooks. It's title is The New York Times Natural Foods Cookbook, author Jean Hewitt. emoticon

2 large eggplants, peeled and sliced lengthwise into 1/2 inch slices
1 cup unbleached white flour
4 eggs, lightly beaten
2 cups cold water
1 tsp. sea salt
1 tsp thyme
2 cups. whole wheat bread crumbs
1 cup wheat germ
1/2 cup sesame seeds
1/2 cup corn oil, approximately
Tomato sauce
***************************
1. Dredge the eggplant slices in flour. Set aside.
2. combine the eggs, water, salt and thyme. Mix together the bread crumbs, wheat germ and sesame seeds.
3. Dip floured eggplant into the egg mixture and then into crumb mixture.
4. Heat the oil in a heavy skillet and fry the eggplant slices in it until golden and tender. Drain on paper towels. Serve with tomato sauce.

Yield: 6 servings

2 tomatoes
1/4 cup orange juice
2 ribs celery, quartered
1 Italian-style green pepper, seeded and diced
1 small cucumber, peeled
Romaine and Bibb lettuce leaves
1/4 cup safflower oil
Lemon juice
2 Tablespoons brewer's yeast

Feeling lazy tonight: 2 cups of chopped fresh kale, massaged with 1 teaspoon of olive oil, and topped with 1/2 cup quartered strawberries, 1 oz total of raw walnuts and macadamia, and a medium Haas avocado. Divine!

Today was a meal prep day so I had all kinds of yummy food!

Dinner was homemade Falafel with Beet Baba Ganoush that is a recipe from Hot For Food. It was so yummy and what a beautiful color!

I only had 1/2 a pita because I feel I've been eating too many carbs lately.

It was a busy night last night, so I made a quick pasta salad. I had some vegan pesto that I made earlier this week and I added broccoli, olives, tomatoes, red onion, and capers to some whole wheat penne. We also a had some vegan chick'n nuggets.

Man, that juice sounds good! I need to restock on some juicing veggies!
It was really rainy today, so I thought soup would be good.
My son requested my vegan Broccoli-Cheddar Soup. So good!
We also had some Simple Truth brand Meatless Chik'n Strips and a little flax bread.

I've been really broke since I got back from my out-of-town job, since we don't get paid until Friday and I had been laid off for a while before this assignment. So I have really been making do with what I have with a tight produce budget.
So tonight I roasted some potatoes that were about to go and made a big kale salad (with organic kale that was on sale 99 cents a bunch!) with a homemade Green Goddess dressing featuring fresh-from-my-garden herbs. I had some homemade cashew queso sauce that I made before I went out of town. It kept quite well and was delicious on the potatoes!

We're going to the hot spring tomorrow! I can't wait!

I've really been struggling with my eating the past month or so. I've always had a bad habit of 'closet eating' (buying junk when no one else is around and hiding the evidence) I had been doing really well with it for about a year, but it has crept back in so last night over dinner I fessed up to my hubby that it is happening again and we have come up with an action plan and he is going to help hold me accountable. I can't imagine doing this without is unwavering support!!

Tonight's dinner is going to be Chick'n 'N Waffles from the Keepin' It Kind Blog by Kristy Turner. I haven't meet a recipe of hers that I haven't liked!

2.5 oz of tempeh browned and seasoned with a bit of olive oil and frank's red hot
stir fried with 1/2 cup black beans and some low calorie vegan pasta sauce, added sliced red peppers, tomatoes, spinach and 1/4 cup of nooch to up the protein. YUM.

Dinners this week will be kind of "shoot from the hip". I didn't batch-cook anything this week for dinner. I was originally planning to eat Morningstar veggie burgers with baby bell peppers as a side, but then I forgot I'd signed up for a food elimination challenge with some co-workers, and processed foods are one of the things I'm not supposed to be eating (I suppose I could make my own veggie burgers from scratch but I doubt I have all the ingredients on hand... plus I just don't want to bother, lol.)

I do have some sweet potatoes lying around. And I also have more of that lentil dal in the freezer that I could eat, too, so it's not a total wash.

MISSHARTUNG did you get the kitty?

Sorry i've been so MIA, but I have been working in the desert walking, walking, walking every day and it is getting hotter each day!
With that, I have been burning between 1200-2400 calories per day and it is hard to eat enough food. My goal was to lose 5 lbs. this month and I think I'll more than make it!

Anyway, last night I had red lentil curry soup that I had brought frozen from home, some brown and red rice blend that comes in a microwavable package (because I am in a hotel room), some spinach, kombucha, and some soy yogurt with a little cereal on top for dessert.

We are making a new style of a tofu sandwich this evening with sweet potato fries on the side. We will eat fairly early because hubby has a gig in the next town over. I will go along to listen and support him, but we'd rather not eat there and save a few calories!

Oh boy, we went to the shelter last night and I absolutely fell in LOVE with a sweet little kitty. She is four years old, but just a munchkin at just 5 lbs. We didn't leave with her though. We told ourselves that if she was still there Friday night, we would claim her for ourselves. It would be meant to be.

We have a rehearsal this evening so we get to go for sushi for dinner tonight! Yum!

The shelter is closed on Mondays, so we are going today instead!!

Last night we ended up having beyond burgers (no buns), with baked beans and corn on the cob. Our first corn of the season and it was surprisingly sweet for early corn!

Tonight we are going to have stir fry with pineapple in it. I looove fresh pineapple in stir fries!

We ended up getting sushi to go last night and it was really really tasty! Tonight I think we are going to have spaghetti squash with a garlic sauce. Both hubby and I are feeling quite tired today and we have errands to run after school so dinner may change, we'll see!

We are eating out tonight! After school I have to drive to the next town over to drop my car off at the mechanic. I have an appointment for tomorrow, but it will be easier to get it there tonight. Then it is back to the town I teach in to put on a fourth grade music concert. We will have a later dinner after the show. I'd like sushi, but it is usually such a long wait. We will have to see how hungry we are feeling.

We actually had avocado toast for dinner last night instead of the other choices. Tonight Will be carrot dogs and sweet potato fries and probably a small salad on the side. The sun has started to come out so hopefully we will get to grill.

Dinner tonight will be a salad. Either salad bar from Ruby Tuesday or salad bar from the local grocery store. We have an 'Arts in the Mall' event that one of my groups is performing in, but I need to be there at 4pm and it won't wrap up until 8pm after which we will need to do some tear down of equipment. Either way, dinner will need to be quick and easy.

I have had a concert three days in a row. Tomorrow I have zero after school commitments and you have no idea how appealing that sounds right now!

Pizza night at our house! We are going to mix it up though by using ranch instead of red sauce and then just left overs of a few different types of cheeses we have on hand (Homemade parm, daiya provolone and shredded mozzarella). Not particularly healthy, but it should be real tasty!

We are also taking a trip to Lowe's to buy the lumber to build another raised bed for our garden this summer! Woohoo.

We had tons of rain yesterday and FINALLY are rid of the majority of the snow! Woohoo! Spring is actually here! We hit sixty this week for the first time in 5 months and 18 days!

The meeting last night went until 7.30!!! We were tempted to get something out, but stayed strong and still came home for dinner. I am glad we did too because it was delicious. That being said, my tummy wasn't a huge fan of eating so close to bedtime.

Tonight is another night out. We have a rehearsal, but we are going to eat an early, quick dinner at home. We will have pasta with a veggie marinara and probably finish off the homemade bread too.

We have district-wide music educator meeting this evening. It starts at 4.30. We will have some fruit for a snack before we go. Many times we would be tempted to just have dinner out after, but tonight we are going to go home and make grilled veggie paninis. Hubby made a loaf of bread Sunday and yesterday we found Daiya provolone slices (new to us) to try out! It will be late, but should come together fairly quickly at least.

I love burritos, but I too can never afford the calories to have one at Chipotle!

We made a new sweet potato and bean burger recipe over the weekend that is very good! I don't think it will be grill-able though.

Tonight we will go out for dinner before a rehearsal. I usually get the wrap, but I am thinking if I am having pasta a noontime, I should probably help myself out by choosing the salad for dinner!

Wellllllllll, I had the best of intentions last night but then I went to the gym and my friend mentioned it was National Burrito Day and Chipotle happened. It was a salad, not a burrito, but still more calories than I should have had. But it was tasty!

We are having homemade mac and 'cheese' tonight. The cheese is the same base as what hubby makes for our nachos, but not the same spices. We haven't had mac and 'cheese' in so long I can't remember just how long!

We are going to have this after going car shopping for hubby. We can finally swing another car payment. He has bee so patient and it is time to get him into something much more reliable!

Dinner last night was nachos. MY hubby makes an AMAZING vegan nacho sauce. They really felt so indulgent, but weren't calorically horrible.

"from your own garden" I can't wait to say that!! I live in Maine and the snowbanks along the roads are still two cars high. It's been beautiful the last two day and we really started to lose a bit of snow, but this morning it is sleeting out! Nasty!

Dinner tonight is going to be tomato and rice soup with a 'Cesar' salad on the side. Our plans changed last night and we had Sesame tofu, veg and rice instead!
