My newest chickpea flour recipe is biscuits! They're not quite the same as a fluffy white-flour biscuit, but they made for a pretty great breakfast sandwich with pan-fried tofu and kale. Yum!

The waffle batter got thinner when cold. I needed to add more chickpea flour for making waffles during the week. It made a lighter waffle than my whole wheat flour.

That's similar to the crepe recipe I used yesterday and today, MONIKAROY...but I modified the heck out of it. Super good =)

You can make pancakes(save) with chickpea flour.
2 cups chickpea flour
1 small onion diced
salt to taste
red chilli powder to taste
turmeric powder 1/2 tsp
ginger- garlic paste
chopped coriander leaves
water
oil for frying
Combined all the ingredients and pour some water to make pancake batter.
Put 1 tsp oil in a non-stick heated pan, pour the batter and spread it thinly.
Drizzle little bit oil on sides and on top and cook till the underside is golden.
Brown on both sides and serve hot.

I've been *really* excited about chickpea flour lately! I know it sounds silly to be excited about a bean flour, but I am =) It's nutritious, filling (this coming from someone with a HUGE appetite), tasty, versatile, inexpensive...I just love it. For those of you who aren't familiar with this product, it's just a "flour" made from ground chickpeas/garbanzo beans.

Have any of you cooked with chickpea flour? Any favorite recipes? So far I've used it for:
~Mini-quiche (vegan alternative for quiche filling)
~Socca (an Italian flatbread)
~In peanut butter cookies (still a "sometimes" food, but the chickpea flour ads a nutritional boost)
~Mushroom-filled crepes (made this for breakfast today and was so thrilled that I was inspired to make this post)

Anyone else use this stuff?
