I love the lentil soup from Panera and it has kale and quinoa, so I Googled it and made it in a crock pot. Delisioso!!

. I love crock pot recipes and this one is pretty simple to put together. I usually put it on low for 8 hours or, if I'm time crunched, high for 3+ hours (my crock pot doesn't have a medium setting).

I love quinoa, but I find that it really needs more liquid and time than most recipes call for. One of my go-to recipes lately has been quinoa pilaf with roasted eggplant and lentils with a lemon vinaigrette. I'll toss it over some greens with chopped up celery and maybe some mint and if I'm feeling like dairy, a little bit of locally made goat cheese.

It was funny because I started with 1 cup of lentils and 1/2 cup of quinoa. The quinoa took over! I decided the proportions were wrong for meatless loaf. At the last minute, I went with an adaptation of an old favorite recipe from The Moosewood Cookbook. Going on memory, I used the lentil and rice casserole recipe for inspiration and it made a very tasty dinner.

I saved half of the quinoa and lentil mixture for another meal.

I REALLY want to like quinoa but the texture was wrong other times I've cooked it ... borderline crunchy. Cooking it with the lentils helped. Longer cook time?

I have made a cold salad with Quinoa with Vegan Mayo and cucumbers and tomatoes. I also eat it hot with spaghetti sauce on it.

Not being a big fan but I'm giving quinoa another chance! I was planning on making a lentil loaf substituting quinoa for the brown rice. The quinoa took over the pot and outnumbered the lentils. Now what? I'm looking for a way to turn this into a tasty dinner ...
