I don't have any actual recipes to share right now but I do have a tip that makes almost all of my recipes fit into this calorie range..... Don't cook with oil.

I don't have oil or each balance or coconut oil in my house at all. I find it to not be necessary.

If you leave it out of every dish you are automatically saving 100-300 calories (at the LEAST) per recipe..

One Tablespoon of any oil is 104 calories.. how many of us use that little. You may THINK you are pouring only a T of oil into your skillet but BE REAL... try measuring that...

If you cook a few servings of green beans in only one tablespoon of oil that dish is now 50% fat.. a worse food than potato chips. HELLO! If you cook it in a splash of water and add your spices after the beans cook a little the dish has only the trace of fat that the beans naturally have in them. (The perfect amount of fat that nature provides to process all the wonderful nutrition in the beans! )

So this is definitely NOT what you asked for.. but you can eat a lot more food if you don't have the unneeded fat too... win win

Hello all! I am looking for low calorie vegetarian recipes that can easily be prepared for one or prepared ahead of time and frozen/refrigerated until I am ready to eat. I have fallen into unhealthy habits again and would really like to get back into prepping my meals for the week ahead.

Also, I know this is practically sacrilege for a vegetarian, but I really don't like mushrooms.
