I like this challenge and I am taking it very serious but I took 10 chocolate chip cookies serious too yesterday afternoon! URRRR!

-Today so far, a fruit smoothie made with frozen pineapple, strawberries and mango, along with reduced calorie apple juice - a Veggie Burger, and mixed veggies with potatoes...Still have a few hours left to go for the evening, so I might slip some V-8 juice in there! I love these kinds of challenges!

Monday I had
1.strawberries
2.2 cups of mixed herb salad greens
3. apple
4. blueberries
5. Banana!!!

Ok so does it have to be different foods tomorrow? I like to try new veggies if anyone has come across one that may have been forgotten.

After this meat recall I am tempted to become a vegetarian
emoticon but I just bought half of an organically raised cow so the vegetarian idea will have to wait emoticon

what a great challenge! are we doing it the next week too? I have gotten a bit lost since we had my daughter home from Italy but ready to move on again.
and I am also just fumbling thru here and realized what a great team and opportunities. i like the challenges

I'm way overdue with this response but for fruit salad I've been having about a cup of fruit, sometimes frozen and 2 tbsp of whipped cream. It adds about 15 calories and makes the whole thing more of a treat.

I love vegetables but I'm going to try to introduce some more fruits with this one. My fruit from yesterday was on top of a "Brownie banana split pizza" that one of my friends made for Super Bowl. I felt pretty guilty about having some but at least it counts for fruit servings which is a nice positive way of looking at it!

One of my favorite snacks when I am craving something crunchy and sort of salty is to slice up a cucumber and pour about 1 Tbls. of flavored rice vinegar over it. FAST, and it satisfies me.

Another favorite is sugar snap peas - have you ever tried them? I get the fresh stringless ones in a package (I think my grocery store sells Manns brand), then eat them in a dip I make with 1/4 cup of fat free sour cream mixed with 1 tsp. of low sodium taco seasoning. Even my picky 13 year old daughter loves those!

You can tell by what I eat that I have a bit of a thing for crunchy and salty stuff (makes keeping my sodium down a pain!). I'd much rather go for salty snacks than desserts and sweets any day!

Let me know if you nee some more ideas - we'll make you into a veggie eater yet!

Yay for trying! My fruits today were 4 different fruits (doubled up on strawberries-yum)--I keep plenty of fruit around, so I can mix up the variety there, just wanted to know that I could double up if I wanted and still have it count. Veggies are a different story--I've taught myself to eat salad (only with romaine lettuce--tried to like spinach leaves and don't), and I like cucumbers and onions and I can tolerate carrots if they're raw--oh, and I discovered this year that I like yams. I grew up in a house where my mother gave us Little Debbie cakes for breakfast and served (only) mac&cheese for dinner--no joke. I never learned to eat vegetables, but I've promised myself to try at least one new vegetable a week for this month.

Lyndsey - The important thing is that you are trying! In answer to your earlier question, 5 servings - they can all be the same veggie/fruit if you choose (but wouldn't that be boring?).

Are there ANY veggies that you like, even a little? Maybe your team mates can help come up with some recipes or snack ideas?

I'm in, but I've already failed for today. We have no veggies in the house except tomatoes, which I loathe with the burning intensity and fiery passion of a thousand suns. I'll go to the store tomorrow and buy some baby carrots for snacking--I can usually force those down, and maybe I'll learn to like them. I know 5 fruits doesn't count but that's what I have for today.

Your challenge this week, should you choose to accept it - is to eat AT LEAST 5 fruits and veggies each day. You must have at least 1 of each (i.e. 5 veggies and no fruits doesn't count. 4 veggies and 1 fruit, however, would). This one is sometimes much more difficult than it sounds.
