Barbara Bush Clam Chowder

3 slices bacon.
1/2 cup minced onion.
1 7.8 oz can minced clams.
1 Cup cubed potatoes.
1 can cream of celery soup.
1 1/2 cups milk.
Dash of pepper.

Cook bacon until crisp. Remove & break into 1 inch pieces. Brown onion in bacon fat. Add clam liquid & potatoes. Cover & cook over low heat until potatoes are done (15 minutes). Blend in bacon pieces, minced clams & other ingredients. Heat, but do not boil. Bacon may be used for garnish.

Serves 4

Smore S’Mallows
What is needed for this recipe.
Dark chocolate or milk chocolate melting candy wafers
1 bag does a big bag of square marshmallows. you can use the round marshmallows also. The small marshmallows are to small to use, but the other 2 sizes are good to use.
1 package of Graham Crackers crushed and placed in a bowl
I used lollipop sticks in mine
I used a candy melter which worked fairly good
Directions
1. put lollipop sticks in marshmallows. I put my marshmallows I a container with the sticks as it was easier to work with.
2. Melt candy wafers in candy melter, microwave or even in a double boiler.
3. place Crushed graham crackers in a bowl and set it close to melter.
4. dip a marshmallow into the melted chocolate. My chocolate was thick so I spread it with a butter knife over the marshmallow and then you roll it in the crushed graham crackers and then place them on a plate to set up. I used a plastic container as I used the square marshmallows and they may not sit exactly square upright. I didn’t need to refrigerate as the chocolate set up nicely as my chocolate wasn’t thinned out.
These were a hit where ever I took them and so many asked for my recipe.
WARNING: if you try them they are addicting and you can’t eat just 1 or two!

i like the looks of the chocolate chip cookies made from the sugar free cake mix as probably the calorie content maybe lower especially if someone is needing to loose weight or diabetic. you will have more than one cookie, but you can freeze them in single servings to enjoy later or share them with family and friends.

GREEN BEANS WITH TOMATOES & BACON
from Eat What You Love Quick & Easy


1 pound green beans
3/8 tsp salt divided
1&1/2 Tbs butter
1 &1/2 tsp sugar
1&1/2 tsp minced garlic
1 &1/2 cups cherry tomatoes halved
2 TB fresh basil
1 TBS bacon bits
pepper, to taste


Put green beans, 3/4 cup water & 1/8 tsp salt in skillet and cook till crisp tender. In another skillet place tomatoes, butter, sugar, remaining salt and garlic. Cook until tomatoes begin to soften(2-3 minutes). remove from heat & add basil. Drain or cook off water from green beans. Pour tomato mixture on top of beans and top with bacon bits & pepper.

6 unpeeled potatoes,baked & cooled.
1/4 tsp salt, 1/4 tsp pepper, 1/4 cup bacon bits,
2 cups lite sour cream,1 cup mozzarella cheese,
1 cup cheddar cheese
2 green onions, chopped

Preheat oven 350. Spray 9x 13 baking dish. Cut potatoes into 1 inch cubes & place half into dish. Combine salt,pepper & bacon. Sprinkle half over potatoes. Top with half sour cream & cheese. Repeat. Bake for 20 minutes or until cheese melts.

BURGER HEAVEN CASSEROLE (Makes 6... 1 cup servings)

16 oz. ground turkey or beef
2 cups diced potatoes
1 1/2 cups sliced carrots ( I used half can carrots)
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas ( thawed)
1 cup frozen corn (thawed)
1 can Healthy Request Tomato soup
1/2 cup water
1 tsp dried parsley flakes

Brown meat.. Put all ingredients into a sprayed crock pot. Cook on low for 6-8 hours. I did not have corn so I added 1 small can of mushrooms

TACO SOUP from Fix it & Forget it

1 large onion, chopped
1 lb ground beef
1 pkg dry taco seasoning
1 can corn, drained
1 can kidney beans, drained
2 qts tomato juice

MAKEOVER CHEESY HAM & POTATO SOUP (From TOH Light & Tasty) Serves 7

2 & 1/4 cups of cubed potatoes
12 oz water

12 oz cubed ham
2 tsp canola
1 onion chopped

1/4 cup nonfat dry milk
1 TBS flour
1/4 tsp pepper
3 cups ff milk

6 oz reduce fat shredded cheddar cheese
1 cup broccoli, thawed & chop

1 Cook potatoes in water til tender. Drain off 1 cup liquid.
2.Saute ham & onion in oil until onion is tender.
3. Mix flour, pepper, non fat dry milk & milk in a large bowl
4. Stir in reserved liquid.
5. Stir mixture into ham & onion & bring to a boil stiring until thickened.
6. Reduce heat to low & add broccoli, cheese & drained potatoes. ( I use masher on potatoes)
Serve when cheese has melted.

PASTA FAGIOLI. (Serves 4)

Ingredients:

1 tablespoon vegetable oil or olive oil
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 pound either ground beef or ground bison. (I used bison as it's leaner.)
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 can (14.5 oz) diced tomatoes
1 carton (32 oz) Progresso™ chicken broth
2 tablespoons chopped fresh parsley
1 teaspoon dried basil leaves, crushed
1 cup uncooked elbow macaroni (4 oz)
1/2 cup shredded Parmesan cheese
Salt and Pepper to taste - as much or as little as you prefer.

Steps:

1). In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook and stir 2 minutes. Next add the beef or bison and brown thoroughly. Add remaining ingredients except macaroni and cheese. Heat to boiling. Reduce heat to medium-low; cover and simmer 10 minutes, stirring occasionally.

2). Remove cover; increase heat to high. Heat to boiling. Reduce heat to medium. Add macaroni; cook 10 to 15 minutes or until tender.
Sprinkle each serving with cheese.

Serving Size: 1 Serving equals 360 calories.

crock pot beef stew. unfortunately i don't measure most of my items.

cubed and sauté beef to get it browned
seasoning of your chose to put on beef when browning
1 large onion chopped in big chunks
celery sliced in chunks
1 clove of garlic grated
beef bullion
water
stewed tomatoes
potatoes peeled and cut in cubes
1 bag frozen mixed veggies

you can make as much as you want or as little as you wish
i used a 6 quart crockpot we love leftovers for lunch. i put 2 cups water and the frozen stewed tomatoes in crockpot along with the beef bullion and put crockpot on high.
when beef was browned put in crockpot. put water in fry pan to get all the wonderful brown goodies stuck to the pan. this is extra flavor. pour that in the crockpot. i then dded my onion, celery to fry pan and sauteed them to gt the flavors released. i then added my grated garlic (you can use minced garlic instead). once this is done add to the crockpot. i let this cooked for a hour or 2 before i added my cubed potatoes. cooked for almost another hour. i heated the frozen veggies in the microwave to get the chill off the veggies. then i added them to the crockpot and cooked for another half hour and hopefully the potatoes are cooked.
i did mix some flour with water and had some water eating in the fry pan so i could add the flour mixture and cook it till thickened. then i added it to the crockpot to thicken the liquid up a little and give it the gravy like appearance, but not as thick as gravy. this flour mixture can be added early with the meat if you wish. it gets all the good flavor from the meat, onions, garlic, celery and stewed tomatoes.

you need to use a bow for my beef stew. you might want to at it with a fork, but using a spoon helps a person to eat the liquid (juice i guess) in each bite.

Skinny Tortilla Soup

1 can fat free refried beans
1 can black beans(drained)
1 14 oz can reduced sodium chicken broth
1 1/2 cup frozen corn
3/4 cup chunky salsa
3/4 cup cooked chicken breast
1/2 cup water


2 cups reduced fat shredded cheese
28 baked tortilla chips

In a large saucepan, combine the first 7 ingredients. Bring to a boil, cover & simmer for 10 minutes. Add 1 cup of cheese & stir until melted.

Put some cheese & chips in bowl & add 1 cup of soup.

7 one cup servings

290 calories, 7 fat, 4 sat fat, 30 cholesterol, 987 sodium, 36 carbs, 9 fiber, 23 protein

Simple Butternut Squash

1 butternut squash, peeled, seeded, and cut into 1-inch cubes
2 tablespoons olive oil
2 cloves of garlic grated
favorite seasoning/seasonings sprinkled on squash cubes before putting in oven
black pepper to taste (optional)

Directions
Preheat oven to 400 degrees F (200 degrees C)
toss butternut squash with the olive oil and grated garlic in a large bowl.
Arrange coated squash on baking sheet. sprinkle with favorite seasoning/s of your choice and black pepper if you choose.
Roast in the preheated oven until squash is tender and lightly browned about 25 minutes or longer.

i lined my cookie sheet with aluminum foil and sprayed it with olive oil to make clean up super easy.

i used an Italian seasoning on mine and it was delicious

I found a Taste Of Home recipe that uses lots of fresh veggies. I am sure I will like it!

Fresh Vegetable Salad
2 cups broccoli
2 cups cauliflower
1/2 cup of each....celery, green peppers, onion
1/4 cup grated carrots
1 cup mayo
1/4 cup sugar
3 TBS grated parmesan cheese
2 bacon strips

Toss veggies together.
Combine dressing ingredients & pour over veggies. Refrigerate.
Crumble bacon on top right before serving.

Using light mayo & sugar should make it low calorie. I cut recipe in half as it serves 8.

Here is a Healthy Exchange recipe that I just tried & really like.

Swiss Broccoli & Noodle Bake

16 oz frozen chopped broccoli
1/2 cup chopped onion
2 1/4 cup of uncooked medium noodles
3 cups hot water
12 can evaporated skim milk
3 TB flour
6 slices reduced fat swiss cheese, shredded ( about I/2 cup)
1 small can sliced mushrooms (drained)
1/4 tsp lemon pepper

1. Preheat oven to 325. Spray 8x8 baking dish.
2.Combine broccoli, noodles, onion, and water in large pan. Cook for 10 minutes or until tender, stirring occasionally.
3.Combine milk & flour. Mix well. Pour into medium sauce pan. Add cheese, mushrooms & pepper. Cook for 5 minutes or until cheese melts. Stir often. Add drained broccoli/noodle & mix well.
4. Pour into pan & bake for 25-30 minutes
