Parsnips are a root vegetable that are great in soups, roasted veggie bakes, you can even add them to your mashed potatoes for extra flavor.

I have had parsnips a few times. They only seem to be available here in autumn, and mostly at farmers' markets.

I've never had parsnips before, I've heard of them but didn't really even know what they looked like other than that they are a root vegetable. So of course I googled it! May have to give them a try! I'm thinking something like roasting parsnips, carrots, celery & potatoes with a chuck roast? Anybody had them that way? Just wondering what herbs & seasonings would be best to use.

I haven't had them very often, and never on their own, but I like them with carrots or used in recipes. I should use them more often, for some reason, it's not something I think about buying very often.

I live in SW MO - about 8 miles from a town of 1000, ten miles from a town of 8,000, and 10 or so miles from a town of 2,000. This is a great farming area, and several towns around have a summer farmer's market.

I didn't know they were not available in other parts of the country, that is good to know. you probably have things that are not available in my region, which is the Midwest.

I love parsnips - they are naturally so sweet! You can't get them in grocery stores around here...Maybe we should plant some when it gets warmer around here.
