That is so interesting. I had a basic understanding of amino acids and combining plant proteins to get the desired effect, but you filled in a number of gaps for me. Thanks!

A protein is a chain of amino acids, and it is those amino acids that your body really needs.

There are 20 different amino acids, each of which is a reasonably complicated collection of atoms. They are given names, abbreviations and letters. I'm name just two:
- alanine, ala, A
- tryptophan, try, W

There is an optimal ratio of these needed by the human body. This is complicated by the fact that the human body can convert some amino acids into others that it needs. Alanine, for example can be made by the human body from valine.

Valine can not be made from anything else, you have to consume some (eat protein that contains valine as some of its amino acids). So valine is an "essential" amino acid. Here is a list of the essential ones, ones you must consume, and the non-essentisl ones too:

Vegetarian have the problem that some vegetable protein sources are very low in certain essential amino acids. To overcome that they often mix their protein sources. Most beans are low in methionine and high in lysine, while rice is low in lysine and high in methionine. Put them together and you get a better balance of amino acids.

Meat on the other hand is a "complete" protein, it has all the essential amino acids.

Even in more detail there is an optimal ratio of amino acids. Clearly from the previous sentence, beans are low in methionine. But there is an optimal ratio of them, which vegetarians get closer to by mixing protein sources.

People who eat meat don't have to think about this since meats have a pretty good balance of amino acids, and where a particular meat is lower in one type of amino acid, this can be overcome by eating a bit more of that type of meat. The same is not true for plant sources of protein, where the optimal ratio is much further off, hence the protein source mixing.
