Yum ... that sounds really good. I think I'll give them a try for our Christmas Day buffet. Something different, and on the healthy side!

"Colorful Quesadillas"

8 ounces cream cheese, fat-free
2 green onions, finely chopped
1/4 teaspoon garlic powder
8 small flour tortillas, preferably whole wheat
2 cups fresh spinach leaves or 9 oz. frozen, thawed and squeezed dry
1 cup chopped sweet red pepper
1 cup crumbled feta cheese

Instructions
In a small bowl, combine the cream cheese, green onions and garlic powder.
Spread about 2 Tablespoons of the cheese mixture on each tortilla.
Sprinkle about 2 Tablespoons red pepper and cheese on one half of each tortilla.
Add spinach: 1/4 cup if using fresh leaves OR 2 Tablespoons if using frozen. Fold tortillas in half.
Heat a large skillet over medium heat until hot. Put 2 folded tortillas in skillet and heat for 1-2 minutes on each side or until golden brown.
Remove quesadillas from skillet, place on platter and cover with foil to keep warm while cooking the remainder.
Cut each quesadilla into 4 wedges. Serve warm.

I HATE fat free cream cheese, but these are really a wonderful appetizer.

Every Christmas Day we have a buffet beginning at around 1 pm that lasts through most of the afternoon (I keep plenty of fresh fruit and vegetables available for grazing!). Our kids come over from 11 am on are the first to enjoy the feast. Sometimes other family or friends will drop in for a visit on their way home from visiting family. It is always a fun day. Every year my kids call a few days before to make sure I'm still having "Crock pot sausage."

Crock Pot Sausage ... a family favorite.

On top of stove combine following ingredients (all but sausage) in sauce pan and cook until onion is tender and sauce starts cooking down.
32 0z bottle of ketsup
16 oz water
small minced onion (about 1/4 C)
1/2 C sweet pickle relish
1/4 C. yellow mustard
1/4 - 1/3 C brown sugar (or splenda blend)
juice from a lemon
3 pounds of kielbasa (lite, turkey or regular)

While sauce is simmering, put 1 inch of water in large skillet and boil sausage for 20 minutes ... poke to release grease.

Put sauce in Crock pot ... cut sausage into bite size slices and add to sauce. Cook on medium heat about 3-4 hours

Makes about 45-50 pieces.

Holiday Parties can be a real challenge ... especially if they have a big buffet!

I've found the easiest way to get through it is be selective. Instead of taking a little bit of everything, I fill my plate (not salad bowl) half full with the salad. Then I only add a little of those things that are out of the ordinary. (I never bother with potato or macaroni salads ... they usually aren't like my homemade anyway). I choose one of the meat dishes (usually chicken added to my salad) and a large helping of the vegetables, a little potato, and a roll.

I don't even look at the dessert plate until I've finished eating ... then I'm usually to full to try it ... if I do pick one, a couple of bites is usually all I need to satisfy my craving.
