Last week I made one of the recipes in the Recipe Forum which I posted. I made The Moroccan Chickpea Quinoa Power Salad, which is a grain salad. I used brown rice instead of quinoa because I had it on hand and quinoa was too expensive for me last week. I also added dried Mediterranean apricots, and it was very tasty. It was very filling also for me, a little went a long way. One cup per serving was very filling.

The morning got away from me, I am going to have whole grain waffles from TJ's and Morning Star veggie sausages for lunch and then this afternoon prep a whole bunch of fruits and vegetables, the ones I will need for the moroccan salad which I will put together for lunch tomorrow and then vegetables for fried rice for dinner.

Made a tasty vegetarian omelette for lunch using up leftovers--I used cholesterol-free liquid egg (2 eggs), Colby-Monterey shredded cheese blend, Newman's Own Salsa, black beans, sliced green onion. Served over some salt free organic corn tortilla chips.

I am cooking from scratch tonight...pancakes! Last day of the month, not much in the way of food around here except for that. Pleased I made a tofu-vegetable stir-fry from leftovers for lunch, though.

Tonight I am making roasted cauliflower with garam masala seasoning, with sliced roma tomatoes and garlic. I am thawing some frozen cooked white beans to toss in oil and lemon and serve alongside or mixed in.

I had oatmeal for breakfast with 1/2 a serving of Orgain Creamy Chocolate protein powder, 1/4 cup of chocolate soy milk, PB Chocolate Fit powder, and a generous tablespoon of natural peanut butter.

I ate a late lunch and made a smoothie out of the last of the plain greek yogurt, some plain soy milk, frozen mixed berries, a full serving of Chocolate Orgain, and two TB of hershey's simply 5 syrup. I am using up what's in my cupboard and not trying too hard, truthfully.

For dinner I will have Gorton's breaded crunchy fish fillets and brown rice. I could have carrots or spinach as well, not sure if I am up to it.

Not much genuine cooking going on today--and not much in the way of real vegetables! I am running out of food, but don't plan on shopping until Monday afternoon. I might walk
to Walgreens on the corner and (gasp) grab a pizza for the weekend.That would be a half hour walking. And carrying bags.

I had cold cereal with banana for breakfast, a no-cook, no-brainer, and a smoothie for lunch (again, not so difficult). For dinner, I am planning on having an omelet with provolone cheese and left over tomato sauce, plus roasted broccoli. If my sourdough English muffins have held up, I'll have that as well with real butter.

I cooked an egg-white cheddar cheese and cooked baby bella mushroom omelette for lunch today, plus 100% whole wheat toast with butter and organic mixed berry preserves. I put turmeric in my egg white so it has a yellowy-tinge, as if the yolk were still there--which it isn't!

I blended a smoothie for breakfast. I don't consider making an almond butter and jelly sandwich for lunch cooking, but I am puttting it together, that makes a difference compared to having a microwave meal pre-made in a box. Will probably put together a salad with leftover white beans for dinner. The rain is staying, so I will heat some boxed low-sodium soup to go with it. Simple and expedient, sometimes that is the way to go!

I cooked oatmeal for breakfast, having a smoothie for lunch, and spaghetti with vegan meatballs and nutrtional yeast for dinner plus a vegetable--probably roasted broccoli.

I cooked breakfast! The last day of the month, just glad to have food at all! Last night I peeled a potato, cubed it,and blanched it. This morning I "fried" it (I did end up adding some olive oil to the pan) in a non-stick pan and then added a cup of canned vegetarian baked beans. Lots of carbs--glad I am working out this morning! LOL



Only concern is the high sodium content of the beans. This is the vegetarian version, I guess, of an English breakfast--without the sausage, eggs, tomato or mushrooms. Just wish I had the tomato and mushrooms!

I baked Banana Muffins (with mini chocolate chips) a few days ago. I had one for lunch, along with 5 oz. of green grapes, and an omelet (2 Egg Beaters plus 2 egg whites) with Red Leicster Cheese with Chili and Red Pepper and and some thawed frozen spinach.

I am sad to be out of bananas, as they are a fruit I eat EVERY day. Oh well, next week.

I will say this about muffins, the best portion control is to FREEZE all of them as soon as possible do that you have to defrost one to eat one. Otherwise, I will eat ALL of them or as much as I can if they just sit covered on the counter.

I chopped up some red pepper, onion, greens, mushrooms and added them to the cooked spaghetti squash with some tomato sauce and spices...along with a tomato sandwich and some Cole slaw

My dinner was a hodge podge of cleaning out the fridge (I used the last of my almond milk on my oatmeal this morning). I don't think I am going to the store until Saturday.

So dinner was...two of Tina's Bean & Cheese Burritos in the microwave, and a sliced small potato and 1/2 cup of sliced onion pan-fried in mixed oil (canola, olive) sprinkled with 2 TB of feta cheese.

As soon as I get "paid", the first food I am buying is a ready-made salad! And more milk.

I have black beans on the stove to keep in the fridge. Dinner tonight is London broil with sautéed peppers and onions and 1/2 a baked potato.
