Urban I'm not sure. Holly really likes Carolyn Ketchum's recipes - and I THINK we don't count that. I'm going to check my ketones and see if they disappear when I eat them. It might be a game-changer for that recipe if they knock me out of ketosis.

Thanks for posting these, KD> I have not been counting Natvia (Erythritol and Stevia combination) and would be using that in the recipe?

I have found it you add a few droppers of Stevia it seems to help the cooling effect.

Regular Keto Shortbread:

2 c blanched almond flour
1/3 c granulated Swerve
1/2 tsp salt
1 tsp vanilla extract
1 stick unsalted butter, softened
1 egg

Preheat oven to 300F. In a medium mixing bowl, stir the first four ingredients together until well combined. With a hand mixer, add the softened butter and mix on low until fully combined. Add the egg and continue mixing on low until well incorporated. With a medium cookie scoop (or spoon), scoop and roll dough into balls and place onto a parchment-lined baking sheet (Im usually able to make 10-12 cookies with this amount of dough). Flatten the dough with your palm until about a half inch thick. Bake for 20-25 minutes or until the edges of the cookies start to brown. Let cool.

She made me regular shortbread cookies once, which were great, but felt "cool" in the mouth. The raspberry shortbread ones are EXCELLENT!!

Edited to say the raspberry ones are a Carolyn Ketchum recipe - and 12 grams total carbs, with 3 grams fiber, 1 gram sugar, and 8 grams Swerve. Does Swerve count or is that not counted @Nightskystar
