well its also changed with no flour like i used to do it. i let it cook down quite a bit before adding the cream so that may be why mine was thicker, too. finished the last of it for supper tonite....

thin? did you blend the mushroom stems? that plus the cream cheese thickened it up...you can use some xanthan gum if you want it thicker..just start with a quarter teaspoon though. mine was really thick..coated the spoon..

Made it tonight...a little bit thin but incredibly delish.
My dear man loved it and ate his TWO huge bowls of it with the bread he baked yesterday (my cross to bear).
I def. will make it again, maybe with 2 cups of beef broth.

like i said i dont often count. the carb count looks high, but probably because i do 8 servings..i cant eat much more than that at a sitting like i said its REALLY rich. i know the bouillon i used was zero carbs..

i just figured it and came up with 31.2 carbs in the entire pot. 3.9 per serving if 8 servings. so its around there. i try to keep any meal i eat under 6 carbs. so it fits either way!

Looks delicious Holly. One of my favorite soups.

I put all of your ingredients into the tracker and it came up with -
6 servings each at 4.5 carbs. Not sure if this is correct but its a good guess.

1 pound mushrooms
1/2 cup butter
one teaspoon fresh lemon juice
1/2 teaspoon onion powder
8 oz cream cheese
3 1/2 cups water
3-4 chicken bouillon packets or cubes...check the carb and ingredient list!
1/2 tsp ground black pepper
1 cup heavy whipping cream

as an alternative you can use 3 1/2 cups chicken broth

wash mushrooms. remove and set aside the stems, thinly slice the caps.
in large saucepan, melt the butter on medium high heat, add the sliced caps and the lemon juice. Saute until mushrooms are just tender..stirring constantly. do not overcook!
reduce heat to low, with slotted spoon remove mushrooms to a bowl.
add mushroom stems to the butter in pan, add onion powder. cook till stems are tender. stir in cream cheese until melted. slowly stir in water and bouillon until all is incorporated. heat till smooth and bubbly.
Ladle half the soup into a blender container and process till smooth. repeat. conversly, use an immersion blender (i use the immersion blender.) being sure all chunks of mushroom are pureed into a smooth liquid.
add the sliced mushrooms back into the blended mixture. add pepper and cream.
taste and adjust seasonings. warm gently, do not boil.

this makes a big pot. i dont know the macros..it will be different with different types of mushrooms. i use a mix usually..baby bellas, white buttons. it makes a bunch. i had a huge bowl for supper last night, then sent my mom a big container, and theres another couple bowls left for me. it makes about 5-6 cups of soup and its VERY rich..you dont need a lot to fill you up!!
