You can do this with any pork roast also.

I like to throw things together, but this was so good I wanted to share (and save).

I had 2 very thick (2.5-3 inches) bone in pork loin chops. They were cut 2 ribs deep. Probably about 1.25 lbs each.

For about 1 cup of marinade:
1 Tbsp fresh rosemary
5 small cloves of garlic
1 tsp oregano
1 Tbsp dried diced onion (I didn't have any fresh, so if you do, probably about 1/4 cup)
2 tsp salt
1/2 tsp pepper
Extra Virgin Olive Oil to cover

I have a little immersion blender that came with a tiny (two cup) food processor attachment that I used to make the marinade, but a blender or standard sized food processor would probably work also.

Put all ingredients into the food processor and pour olive oil until all ingredients are submerged
Run the food processor for about 30-40 seconds to get the correct consistency. I like some chunks of garlic to be visible but everything else should be a kind of slurry.
Put chops in a doubled zip top bag and pour in the marinade. Toss, knead, wiggle and otherwise manipulate until marinade is completely dispersed over your meat.
Leave in fridge overnight.

Next moring while making coffee, drag out your crock pot and cook on low all day.

I used some bone broth as a little liquid in the bottom of the crockpot
