Thanks, Holly! I have made one with cream cheese... This one seems like the texture will be better.

Julia I think i found it online and tweaked it. i like raw cauliflower but not the cabbagy taste of cooked..and i can taste it in things..so never even tried the ones that have the cooked in them. i dont do cauli mash or anything like that. i agree with your son!! LOL
this one isnt too eggy..i have another that doesnt use the almond or coconut flours, but its too eggy for me. this one was pretty good texture and flavor wise.

Sounds yummy and also - more importantly - looks like something my son might actually be willing to try. The ones with cauliflower are doubtless good, if one already likes cauliflower, but he hears that and goes “oh yuck” without being willing to try.

Is this recipe one you made up, or did you find it online elsewhere ?

Thanks!!

2 cups grated whole milk mozzarella
1/4 cup parmesan cheese
2 eggs
whatever seasonings you want.

i just mix it all together and spread it on a parchment lined cookie sheet. bake at 375 for 10 mins or till it looks not wet, then take another piece of parchment and flip it..bake for another 7 mins..remove and put toppings on. theres only 8 carbs in the ENTIRE crust...not per slice. i look for every carb cut i can find. i cant eat more than 2 slices of this..its really rich..and i cut the pizza into 8 slices. so depending on what your toppings are, theres 1 carb in each slice from the crust.
one of my favorite toppings..brown some butter, add some minced garlic. drizzle over crust. top with 1/4 tomato really thinly sliced, fresh mozzarella, and fresh basil. so so good!!
