Thanks for that recipe Kathleen. I am going back to my friend’s lake house with my husband in a few weeks, and I’ll bring a jar of those with me. And might have a gin and tonic as well.

Gin & Tonic Pickles ( can use as garnish for Gin & Tonic Drink or eat alone)
These ingredients are for one jar of pickles.

Ingredients:
7 mini cucumbers (they come in a package of 6 or 7)
2 Tablespoon Rose's Lime juice
2 whole limes juiced
1 Tablespoon whole Juniper Berries (crush before use) ( find in spice isle)
1 cup Gin
1 cup Diet Lime Tonic water

Wash and quarter the cucumbers
Crush the Juniper Berries to release flavor
In a wide mouth mason jar add your dry ingredients.
Then stand all your cucumbers upright in the jar (hopefully they all fit tight)
Pour in the lime juice and the Rose's liquid.
Now add 1 cup Gin and 1 cup tonic. If you need more liquid add more tonic to cover the pickles completely.
Close lid tight and invert a few times to mix the ingredients.
Stand upright in the refrigerator for two days. They are ready to use after two days and keep in refrigerator for up to one month

I put one or two pickle spears in a glass of Gin & Tonic drink with ice.
