that sound wonderful. I'm so lazy ... I just break and stir 2 eggs, but it in the pan, let it cook a little, then sprinkle shredded cheese on top, and continue.

I typically pick one of a few types of shredded cheese:
- cheddar cheese
- mozzarella
- tex-mex

Mostly my omelettes are a look in the fridge for any fryable veggies, Fry them quickly to remove excess moisture. (especially like onions, mushrooms, peppers, broccoli, asparagus...meanwhile I stir up a couple of eggs, add whatever cheese looks good with the veggies (which means whatever I have on hand) put the veggies into the egg then pour it into the pan. If it looks like I need more flavour I add some seasoning salt or any herb that sounds good - really like basil, thyme, or curry, Italian, greek... I may add some chopped fresh spinach, or herbs or dried kale to the raw egg if it looks like I have enough egg to hold it.
I like to keep it simple.

Admittedly Im not a huge fan of eggs. However, I do like omelettes when eating out. (Something about someone else making it for me!) Ham, cheese, and mushroom is my favorite, with a side of guac.

My go-to breakfast is an omelette or egg scramble with veggies...
Came across this listing this morning and made me smile so am sharing :

Omelettes in their commonly known state usually follow ketogenic macros. The base of eggs, addition of vegetables and/or cheese makes them naturally very low in carbohydrates. Iíve seen higher carbohydrate ingredients like sweet potatoes, black beans and quinoa added to an omelette. Stick to low-carb vegetables, fresh herbs and avocado. Omelettes are great to order when you are eating out in a restaurant; ask for an avocado or guacamole on the side to add extra fats and fiber.
Simple Ketogenic Omelette Recipes:
Denver Omelette: add chopped onion, bell pepper, shredded cheese
Ham and Cheese: add 1/4 cup of shredded cheese and sliced ham
Indian Omelette: contains chopped onions, green chilies and cilantro
French Omelette: made with butter, onions, tomato, herbs and cheese, stuffed with spinach
Persian Omelette: add tomato along with garlic, turmeric powder and dill
Mediterranean Omelette: made with spinach, onions, olives and oregano
African Omelette: minced mutton, red paprika, onions and red chilli paste.
