I have been getting ready for the challenge! Sent you a friend invite too.

I've been slacking keto wise but following enough to improve my A1c. Biggest issue has been eating out. I have too often thanks to hubster, lol.

Can't wait to give these cookies a try Avery. I really need some items like this to get over an afternoon hump.

I have most of this on hand including the TrueLemon. The only cream cheese I have is the whipped kind, going to put the regular on grocery list. Thanks!

My hubby and Gauge both liked them. Gauge tends to not like any of my keto desserts. He said they tasted like lemonade cookies. (Because of the lemon flavor I added)

Ingredients
1/2 cup (56g) Coconut Flour
3 tablespoons (60g) Cream cheese softened
1 Egg
1/2 cup (113g) Butter softened
1/2 cup Erythritol or other sugar substitute
1 teaspoon Vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt

Instructions
In a bowl, cream together the butter, cream cheese and erythritol (or sugar substitute of choice).
Add the vanilla extra and egg. Beat until smooth.
Add the coconut flour, baking powder and salt and beat until combined. The mixture will be sticky.
Place the mixture onto a piece of wax paper (or parchment paper). Mold into a log shape, using the paper to roll out and wrap the paper around the dough and secure the ends like a Christmas cracker.
Place in the fridge to firm up for at least an hour.
Preheat the oven to 180C/350F degrees.
Line a baking tray with parchment paper.
Remove the dough from the fridge and cut into 1 cm slices.
Place the slices on the baking tray.
Bake for 15-18 minutes until golden.

*I made my cookies about half her size, I came up with 30 cookies. I also added one packet of True Lemon's crystallized lemon. It made a delicious cookie. I did top some of them with my low carb cream cheese frosting and they tasted like bite sized cheesecakes.
