I don't add the breadcrumb.. of course, I suppose you could add crushed pork rinds in place of it. I just never seem to have any on hand when making or just forget. I do add a bit of italian seasoning.

I found this recipe on Pinterest. I didn't want to make it with mayo and vinegar, so I changed it a bit. Here's the link to the original recipe in case anyone wants to use that version.

4 pork chops
4-8 oz mushrooms, sliced
oil for cooking (I used refined coconut oil)
seasoned salt, garlic powder and black pepper, to taste
1 cup heavy whipping cream (I use Organic Valley, has the least amount of carbs I could find)
Parmesan cheese

Preheat oven to 350 degrees. Put the oil in a frying pan and get hot. Sprinkle seasonings on both sides of the pork chops and pan sear each side in the frying pan (about 2 minutes per side). Transfer pork chops to a lightly greased baking dish. Bake pork chops for 20 minutes.

While pork chops are baking, cook mushrooms in the same frying pan used to sear the chops. Make sure to get up all the burnt bits. After mushrooms are cooked, slowly add 1 cup of heavy whipping cream. Add more seasonings to taste. Simmer (stirring occasionally) sauce until the pork chops have baked for 20 minutes.

Remove the pan with the pork chops from the oven and spoon mushroom mixture over the pork chops. Top each pork chop with shredded parmesan cheese (I use fresh parmesan cheese that I shred myself, but I'm sure other versions would be good also). Put the pan back in the oven and cook another 10 minutes. Remove from oven and let rest 5-10 minutes before serving.
