LINDA, NO YOU CANNOT SUBSTITUTE ANYTHING ELSE, THE PSYLLIUM HUSK POWDER IS THE "FLOUR" THAT HOLDS THE PASTA TOGETHER. YOU CAN BUY IT HERE, OR YOU CAN FIND IT AT A LOCAL WHOLE FOODS STORE, SPROUTS OR OTHER STORE THAT CARRIES ORGANIC PRODUCTS. READ LABEL, NO SUGAR!! It is about 20.00 for the bag, but it does last a long time. Sorry about all the capital letters....

I'm not sure, Linda! I don't use Psyllium husk, so I would probably substitute something like almond flour.....BUT....I'm not a cook/chef and end up just dealing with whatever the end result is! LOL Hopefully we can get Phyllis in here to answer your question!!

Boy am I a dunce..... I had a really nice rolling pin that I have had for over 40 years but I hardly every used it. Well I guess in one of my recent moves, I got rid of it because I can't find it.....

Still trying to find a source for the Physillium Husk powder......Any ideas for a sub in case I can't find any?

Base Recipe for PASTA
(I have to say, it was pretty darn good pasta.) I will post a few more of the good recipes as I make them.

Ingredients:
4 lg eggs
5 oz Cream cheese (full fat kind)
1/3 cup Psyllium Husk Powder (I found the NOW brand to be the cheapest non sugared kind and ALL other's are usually sugared, including the Walmart brand and Walgreen's label, NOW is the only one I've found at the most reasonable price)

This makes 4 servings. Each serving:
240.3 calories
14.8 gr fat
12.6 gr carbs
9.3 gr fiber (yeah, we'll all poop good)
3.4 gr Net Carbs
9.5 gr Protein

TIP: take your time to roll out the dough. Making it as uniform as possible. This will give your the best end product.
You can store this for 4-5 days in the refrigerator.

Preparation:
1/ Bring cream cheese and eggs to room temperature ( just left mine out overnight)
Preheat oven to 300 degrees F.

Steps:
1. Mix together all ingredients until dough forms.
2. Between 2 pieces of parchment paper (you have to use it), roll the dough out to the size of a cookie sheet. Tho dough should be just under 1/8" thick.
3. Bake dough for 10 minutes, with the parchment paper on the top and bottom of the dough. Once done, remove the parchment from the top and let cool.
4. Once completely cool, roll the dough tightly into a large log and use a sharp knife to cut thin strips.
5. Use as needed for pasta dishes.

I will shortly post the recipe for the pasta part. It's in my Keto-fied cookbook. The author was sneaky, posted the recipe on ruled.me, then refers you to his cookbook for the pasta recipe, which you have to buy the cookbook if you want to make the pasta. Just a sneaky way of garnering sales, and I'm not against that. BUT I will say, the recipes in that cookbook are definitely very good. I've made several now. Liked them all. Added or changed spices about though. I like spicy!
