Scrumptious Lentil Soup

Prep 10 mins ∙ Cook 10 mins ∙ Makes 205 (Scaled) ∙ Source Website: WhatTheHeckDoIEatNow.com Adapted From: Nussinow, Jill. "Shane's Fabulous Lentil Soup". The New Fast Food.
INGREDIENTS

1 tbsp canola oil for sautéing (or use a bit of water/broth for oil free)
1/2 onion chopped
1 carrots chopped
1 bay leaves
1/8 tsp thyme
3 cups vegetable broth
1/2 cup brown lentils
1/2 cup red lentils
1/2 medium potato diced
1/2 tsp salt
pepper to taste
3/4 cups frozen corn
DIRECTIONS

1. Press the saute button on your instant pot and saute your onion in canola oil (or a little water/broth) for about a minute. You can dry saute.
2. Add your carrots and saute for another minute.
3. Add bay leaves, thyme, broth, red and brown lentils, potato and stir.
4. Lock the lid in place and push the manual high pressure and set for 6 minutes.*Note!
5. Let the pressure release naturally.
6. Remove the lid and remove bay leaves.
7. Add frozen corn.
8. Add salt, pepper to taste.
8. Stir and serve immediately.

NOTES

*Instant Pot Recipe: 18 mins soup setting, natural release. The soup setting takes longer than manual. Lentils usually take 6 minutes high pressure with a natural release. It is better to let it finish cooking in the Pot after you have checked it than to have it over cooked. Make sure the Pot is turned off and just recover and let sit 5 minutes.

The Instant Pot is my first time using any kind of pressure cooker. I've been using it for about 6 months now. I do have some cookbooks that I refer to, but really, using the cooking chart that came with it is the best for me since I tend to eat rather simply. Being able to perfectly cook dry bean, rice, potatoes, green beans, etc. in a very short time has been a real pleasure.

I use my off brand instant pot a lot! I love it. I like to make my morning oatmeal and soups mostly. I also get a lot of ideas from YouTube emoticon

I recently became the ecstatic owner of a brand new Instant Pot, thanks to the steep markdown of them on Amazon Prime Day. I have already checked out Pinterest and YouTube for some vegan Instant Pot recipes, and have given potatoes and dry beans a dry run in them, to much success.

I was wondering if others have tried it ot, and if you have, what your favorite recipe was?
