It's a rented van we are taking and are traveling with other people. I'm looking for something dry. We'll go with some nuts and roasted chickpeas for the salty. Maybe some chickpeas. We will bring grapes and some plain veggies, I guess.

Bake your own pita chips to go with Will's hummus and salsa.

Have you ever cooked on your engine? My husband and I make foil packets of veggies and tofu or sausage (meatless, of course!) when we go on long trips.

"Cookies" of oats, mashed banana, and peanut butter are quick and easy to make, nutritious, and travel well.

I just had some new ideas. Make your own veggie tray. The other evening I grilled some beets. They dried out just enough so that they weren’t messy. Also grill some other veggies too, like cauliflower, asparagus, broccoli, and celery. Use the George Foreman, or you can bake/broil them.

Bring a small container of hummus for dipping. Salsa too (make your own salsa and hummus). These things do well for a while without refrigeration.

Still keep the nuts. Make little portioned baggies. It's so easy to over eat them if you don't.

Fresh fruits, like grapes, apples, bananas, plums, and oranges.

Also, make your own fruit chips. Thinly slice whatever you like (plantains, bananas, apples, or pears) and treat with a little olive oil or canola oil and sprinkle with sea salt. Evenly spread on a cookie sheet and bake for 20 minutes in a preheated oven (350 degrees). These are great. Bag them up. Delicious snacks.

Air pop some popcorn.

My three teens and I will be making two 12 hour car trips in the next couple of weeks.

In the past, our road trip munchies would have been chips, salted nuts, beef jerky, and soda. We've been vegetarian for about a year now, and we have been slowly transitioning to whole foods.

Does anyone have any suggestions for some whole food snack on the trip that won't take up too much room in a small cooler and won't be too messy? We will be drinking lot's of water, of course.
