I've been enjoying Thai Green Curry. I use the Thai green curry in a little jar, put a spoonful or so into a frying pan, add a can of coconut milk (reduced fat, if you like), and a bunch of cut-up vegetables: eggplant, yams, potatoes, green beans, etc, and some cubed tofu. Cover and let it all cook until the veggies are done. Serve over brown rice with fresh basil and a sprinkling of chopped toasted nuts (almonds or peanuts). Yum. Easy and satisfies my love of Thai food.

Been a long time, but I had such a good experience yesterday, I'm inspired. I went to an Indian cooking class. We made what's called aloo paratha., Aloo means potatoes. They are boiled, but not left with a little firmness. Spices are added ( the teacher kept the spice mild) and the mixture is mashed up with clean hands into a combination of mashed and small chunks. Separately, a simple dough is made, shaped into balls and then rolled out. A dollop of the potato mixture is put in the middle and the edges folded up..Then what I think is the really different part is that the dough us rolled out again in biggish circles with the potatoes between the dough on either side, leaving the chunky parts of the potatoes still a little dense. Then they are cooked like a pancake but with slightly more oil. We ate them hot but in India they are cooled and often sold to truck drivers who need something substantial that they can hold in their hands to eat. It's not something to eat every day, but oh so good! Thankfully there were leftovers; I have some cut up into wedges in my freezer. They will make a special addition to a meal of protein and freggies.

Have not had in awhile but if you take little canned shrimp, a little mayo and pineapple chunks and mix together. Add onion if you like, really good.

I enjoyed a protein shake , vanilla, with a teaspoon of pb2, and a teaspoon of cocoa. I mix and heat it up.good. Supposed to be a Butterfinger shake. Only thing is my protein shakes have artificial sweetener but recommended by my gastric sleeve surgeon

I like my salad with home grown lettuce (red mignonette) from our vegetable garden, Red
kidney beans very small tin, small tin of red salmon. I add red onion a few thing slices.

My dressing I make consists of Lemon juice, crushed garlic and olive oil equal amounts in a jar and shaken up with a little Pink Himalayan sea salt and cracked black pepper.

If I am wanting this for a main meal at night I sometimes add other things like sliced tomato minus the seeds and boiled potato cooled, peeled and diced up, plus a boiled egg sliced up. A few rice crackers go nicely with this to have on the side.

This is always a good meal I've enjoyed.

I made myself two days this week a shrimp salad. I put down on my plate raw spinach and topped it with 11 cooked cold large shrimp and half a red bell pepper. I drizzled over it two table spoons Kraft Sweet Balsamic dressing. YUMMY!!!!

Oh, this one is bittersweet. I went to a class at a house out of town and went out to lunch on my own, getting this fantastic (expensive for me) lunch of a tahini sweet potato patty with sautéed veggies and kale salad. I wasn't particularly hungry and savored only a few bites, knowing we were going to have other snacks later back at the house. Those were heavenly bites! It was too warm to leave the leftovers in my car, so I took them into a library that has cold granite counters (there were a ton of people and I didn't want to ask to use the fridge)- and forgot the scrumptious lunch there! I'll bet whoever was in charge of cleaning up just tossed it in the trash, not knowing what a gem s/he could have had for dinner.

But those few bites were fantastic. In the old days, I would have not allowed myself to think I could spend the money again, but I think I may go right back and get it again next week, if we have another class. So what if I end up on the street in my old age. I'll have my memories of a great meal. emoticon

I get inordinate pleasure from a meal of just a generous chunk of canned salmon and a lot of veggies. The veggies are often a mix of raw and cooked and even hot and cold with just a touch of dressing. I often mix whatever dense food I'm having in to a big salad, but for this, I like the salmon separate. It tastes so rich! This meal can last me for hours longer than just about anything except really decadent restaurant options.

Recently I've been enjoying a salad for my meal at lunch. I had stopped eating salads much through the winter and now I'm kinda hooked on them again for lunch.

My salad has 3 different lettuces (romaine, buttercrunch, red leafy), kale, carrots, red onion, radish, celery and tomato with either red kidney beans, black beans or chickpeas added ... and sometimes rice or corn as well. I may even add leftover diced red potatoes someday...that would be good too! I've been using Creamy Cesar Dressing. I usually have whole grain crackers on the side ... sometimes homemade hummus topping them.

This has been a filling meal and one I look forward to eating every day. I get most of my salad 'fixins' from my garden.

I think this can definitely be an ongoing thing. talking about recent meals. I think it's good to have a place where we can admire food. It can help offset the subconscious idea that we might be giving up important pleasure in food and the tendency to be too dramatic over our food mistakes. Slim cultures often talk about a good meal after they eat it. It's a way to savor food without overeating it.

Although I can't eat more than 3-4 ounces at a time, my husband grills the best steaks. I savor every bite and sometimes have a delicious glass of red wine with it. That with a side of grilled onions and mushrooms has to be one of my favorite meals, with plenty left for steak salads in the next few days.

Recently or all time enjoyed?

I had a mild creamy lamb curry in an Indian restaurant once that was memorably delicious. However I've not managed to enjoy a curry so much since!

More recently I have often found myself eating my evening meal and when finished I say "I enjoyed that!"

I had some plain ol' canned salmon on a big salad. The salmon was so tender; I could really feel the fat. I love how even simple foods can be such fun.
