I lighten up my meals by using veggie broth instead of oil and many times I use freshly squeezed lemon juice and oil for salad dressings. It is really good. Last week I made vegetable fried rice using cauliflower rice and fried it in broth. At the end, I added a very small amount of sesame seed oil to give it the fried rice flavor. It was very healthy and tasted so good. I had the leftovers the next day and another employee told me how good it smelled. He was going to get him some. I gave him the recipe and he made it. It is a very simple recipe!

I never track my meals on the weekend so I am starting it this weekend. I am going to take pictures of anything I eat so I can go back and review it. By the end of the day, I will be able to see what I have eaten and will be able to decide the snack I eat later in the evening. Maybe I won't have a snack at all!

I am using my granddaughters 8-inch plate that I bought when she was 2. Now she is 10 and likes having a big plate. I am going to buy some pretty 8 inch plates I seen at Walmart this weekend so I will have more than 1 for the day.

I always have breakfast and use the nutrition tracker. I try to buy single serving snacks for most foods. If snacking crackers I eat out of the box the exact amount it says for one portion.

I have pleurisy, 2 types of anemia, macrocytic anemia, Iron deficiency anemia, from blood transfusions with wrong antibodies, causes blood to replace daily instead of 100 days, chronic pneumonia, pleurisy, chronic kidney disease, a partially collapsed lung, low blood pressure & blood clots in both lungs for 3 years. Now formed scar tissue.I am 56 years old. I had cervical cancer 6 years ago, no signs last 4 years as well. I have new blood clots now,2019.I am on P.S.T. time zone.

I journal or track all my meals in a notebook. Been doing this for many years and it really helps me to stay on track with calories.
I also plan at least 5 days of activity of some type. I go to classes, do dvd's at home, walk, and lots of chores at home and the yard, grocery shopping too and babysitting,etc.
Eating less calories is the main thing and all food groups I feel. Drinking lots of water is a big plus and closing the kitchen after dinner.......

I track my food by the week. On Thursdays(usually) I get the weekly flyer for the following week. I find out what freggies will be on sale and what frozen dinners will be on sale. I plan my meals for 7 days and make my shopping list. If the sale is a good one on dinners, I stock up as I have a freezer. This saves me time and money at the grocery store because I am not looking at things wondering if I will need it that week, I know what I want and I am in and out. It saves me money because I am not buying things not on my list even though I do walk all the aisles for steps.

I tracked everyday while losing weight and lost lots of weight, reaching maintenance. This summer I wasn't on SP much and didn't track my food. I gained at least 8 pounds back which I am having a heck of a time losing. It took me awhile to get myself back on track, but life happens. After losing 122 pounds, and I am not going back there. Eight can turn into 20 then 30 in no time if I kept going the way I was. I put the brakes on before I was completely out of control. Now if I could only make myself exercise. emoticon So believe me when I say I know how important tracking is.

If you are exercising - this may DEFINITELY be the reason that the scale doesn't move and your clothes are looser!

The husband has joined you in wanting to eat better! Wow! That's great! You should earn weight loss points just for that! You rock!

I was a bit discouraged last week, no weight lost, but I tried on a dress for a wedding this weekend and it seems to fit a bit more loosely. I can also see my legs shaping up. My goal this week is to get a tape measure from the dollar store and start tracking my measurements, I am enjoying new recipes and my husband has joined me in wanting to eat better.

I journal all week and try on the weekends, I eat 3 meals and 4 snacks. I eat supper around 6:30 and don't eat anything after 8:30. I exercise 3 times a week or more, I drink lots of water everyday.

I was motivated to clean out my fridge and cabinets. I got rid of nearly all of my processed, pre-packaged foods (except mac n cheese).

Well, I am putting all the knowledge ans advice to good use with this challenge as I am now in the final week. Really enjoying using my crockpot or making the most of buying an already rotisserie cooked chicken at Sams Club. I have used the leftovers in a healthy sandwich on whole wheat light bread and using romain lettuce and mustard instead of mayo. I make it a habit to bring an extra bottle of water, healthy snack, fruits, and a within calorie range meal at work, which always has my co-workers what smells great in the break room when I am eating.

Decided I am doing so well with my healthy habits of eating better, exercising and keeping to my weekly goal thanks to the Skinny Jeans challenge. I have been doing these to challenges for the past 30 days and feel emoticon

This has motivated me to take on some home improvement projects and keep active during the weekends so I don't slip up. Also I decided its time for a criss cross spark effect and have volunteered on a 1st ever local Alzheimers Association walk for my hometown this fall. I am on the planning committee and will be trying to get local sponsors and "spark" people into registering to do the 1 mile walk and either donate or create a donation page or form teams. Hoping to meet and motivate some interesting folks. Alzheimers has effected my family directly so I am very much into the funding for a cure, help with cost & support for caregivers, and research into some way to stop this devasting long lasting disease. Its one of my biggest fears for myself and now my mom who is starting to exhibits signs.

Thats why I am so adamant about being as healthy as I can so if I need to become my parents caregivers I am at my best and already have the habits in place to stay strong. I can honestly say, this challenge has helped me a great deal with accountablity. Thanks so much for the posts, support, and advice.

Sometimes I forget how much I love a salad! I think when I forget what is in the fridge I tend to desire going out for a meal instead. Today I had kale that I just remembered I had in the fridge. I also added red onions and mushrooms and tossed on some tofu. It was a pretty well rounded meal. I do think I ate too much bread with it, but otherwise I think it was pretty tasty and healthy. I had a big salad for lunch, and for dinner I am looking at leftovers and another salad. emoticon

Last night had the most amazing salad! I used Lemon juice instead of dressing since there was so much going on in the salad! I should have just had the salad and skipped the pasta!

I will likely never get my partner to ever love new grains or veggies. I have been able to figure out a few ways to get him to eat veggies he hates. That to me is a major victory. I am hoping to get him in the kitchen over the next few months, I leave for 2 years in March and I want him to continue to eat real food.

My second goal was to find my peace and groove in my kitchen, I have. I did have to cancel my CSA since they seemed to deliver to the wrong apartment and I can go to the local farmer's market without someone getting screwed. I think moving to a new apartment has helped. Also knowing how long I am stateside has helped as well. Just knowing that a job would be silly has put me back into focusing on clean healthy food.

My goal for this week is to keep eating more veges and good Vit c fruits. Increase my selenium education and B vitamin intake. I am also 2.2 units away on the BMI index to move from my original point of obese, to unhealthy, to healthy range. My original goal of 148LB was to get me out of the obese BMI index. I am sooooooo tired of reading my medical check-up summaries as obese. I "get" to go to the doctor today and show off my weight loss. I can't wait to get my hands on his report. I would not have gotten close to where I want to be without this challenge!
I eat more vegetables, variety in fruits and a LOT more of white fish in parchment with a teaspoon of Mayo and Parmesan on each side and a good dose of fish spices. Its made all the difference. emoticon

Even as the Leader I am in Week 4 with the rest of you! I've come a long way. I've made many changes in my eating habits such as;
1. measuring out snacks
2. being a conscious eater
3. drinking more water
4. gave up diet drinks
5. drinking more black tea
6. getting in 5-6 veggies and fruits a day
7. less red meats
8. eating more fish
9 recognizing when I'm full
10. drinking less alcohol

What I need to work on is slowing down when I eat. I think as mothers we tend to eat fast because so many depend on us and we need to 'get it over and done quickly!" That has created a monster! I see now that I eat way too fast! I've become a 'conscious eater... but it still isn't good enough. I really need to just put the fork down and really SLOW DOWN! I think I do pretty well when we have guests because I get engaged in conversations, but with just DH and I now it's a little hard. I need to try.
