My goal is 1 lb raw veggies a day 1 lb lightly cooked or steamed veggies a day.

1) Via Vegan soups - Oh... I just found one called Velvety Zucchini Soup (5 ingredients!) I'm going to try this week.

2) Via huge Salads - I am a Nutritarian and I find salads one of the best ways to get in my veggies

3) Veggies for breakfast - Monday 7/9 breakfast menu - 1 frozen bag of organic sweet potatoes (cooked) $1 at Walmart right now here! sprinkled with cinnamon, ginger, diced apples and 1/3 cup of dried cranberries with a drizzle of almond butter on top. OH MY! (Also, this equals **5 servings of FREGGIES! If I can't eat it all I put it up for lunch but I usually make this after the gym and I scarf the whole bowl down

4) Smoothies - 1/2 cup garbanzo beans, spinach, water, 1 cup frozen fruit of choice and ice or more water if needed. **3 servings of FREGGIES!

5)Spending time on Pinterest and looking up fresh new recipes to try!

I've gotten back to eating a layered salad for lunch and what I don't eat - I finish in mid afternoon or in the evening when I get HUNGRY!!!

I've added protein to my layers of veggies and have added a "crunch" la choy chow mein noodles, fritos - about a half cup - enough to top. They seem to satisfy the "crunch".

I make a lot of salads with different vegetables,different types of lettuce and sometimes all spinach and sometimes a mixture of spinach and lettuce.

I have pleurisy, 2 types of anemia, macrocytic anemia, Iron deficiency anemia, from blood transfusions with wrong antibodies, causes blood to replace daily instead of 100 days, chronic pneumonia, pleurisy, chronic kidney disease, a partially collapsed lung, low blood pressure & blood clots in both lungs for 3 years. Now formed scar tissue.I am 56 years old. I had cervical cancer 6 years ago, no signs last 4 years as well. I have new blood clots now,2019.I am on P.S.T. time zone.

emoticon sounds delicious. I just bought a new container of Hummus and some fresh bell peppers, carrots, celery, and lettuce. I'll have to try wrapping the hummus in the lettuce..new concept.

Hummus wrapped with various veggies is terrific. Different lettuces, avacado, chopped tomato, chopped carrot and oh so many more veggies you could use. Delicious!!!

I am with you EnglishGirl! I like the 10 ingredient salads! And yes, I am a victim of store bought dressings... Until we get that personal cook in the kitchen... I have to be happy with the store bought dressing (which are AMAZING)! emoticon

I like the suggestions you ladies have made and you all make eating five veggies sound so much easier. In my case, I love a salad with green onions, celery, various colored peppers, tomatoes, different lettuce's and occasionally, chopped zucchini and carrots. However I admit, I have been using store bought salad dressings.

I really like hummus and I have been eating it with carrots and celery

For lunch it's: Lettuce, baby carrots, tomatoes- that's 3
For dinner it's: smoked corn on the cob and smoked asparagus.

That makes 5 and so simple.

we'll have leftovers so we can have the smoked roasted veggies again this week.

On my way to a healthier life.

I add a ton of veggies to my pasta. Last night I made pasta primavera with broccoli, mushrooms, red, yellow and green peppers and some shallots. Added herbs to my oil as I carmelized the onions. It was delicious. Add a salad on the side and there were definitely 5 veggies in one meal!

I added parsnips to my "5 a Day"...Roasted Parsnip Fries! Yummy! AND!! I am going to try a Roasted Parsnip and Garlic Soup with Mushrooms recipe this weekend! I get the fresh parsnips at our local farm stand!

How is this productive???

Its off task to the challenge. What FUN is it to post when someone else jumps all over their suggestions with their opines? ?? Twice. I don't think the Spark website was meant for debating rather, it is meant for empowering each other. Look at her reply post. Everyone has to decide for themselves.

smoke point is the key word here. Different oils have different smoke points. Just make sure if you do go past the smoke point your oil and food is still eatable. :D

Snap peas are what I am having tonight! I bought a big bag. I have been saving my fat calories for dinner, and I am using REAL butter. I used to put a slab of butter in everything. I love butter and veges. But I am good now and its butter only once a week.

Lets keep thinking on the VEGETABLES TO EAT List. Thanks for contributing. C'mon guys there are 9 thousand of us on this challenge, especially you guys.... past week two....pick up the gauntlet! Throw me some suggestions for my stew(s). I actually even bought a turnip!!!!!!!! emoticon

I respectfully disagree...grilling in aluminum foil does not bring it to "smoking". More info is available online for those who may be concerned. Weigh the facts and discern for yourself what is best for you.

I toss all the veggies in a little olive oil and wrap in an aluminum foil packet, then put them on the grill! I love cooking veggies on the grill! I try all kinds of combinations!!

I have practically no experience with leeks....they intimidate me....do you drizzle/brush a good olive oil on it before grilling? emoticon

I love your post! FUN!! Thanks for sharing! I’ve almost completed week 4 and can always use more ideas!!

Egg-beaters omelet with broccoli and mushrooms...a little light cheese too!
Sliced red bell pepper and carrots with hummus for a snack
Mixed lettuces, sliced cucumber, cherry tomatoes, a few black olives topped with tuna and crumbed feta cheese...a lite balsamic vinaigrette
Celery dipped in a spreadable goat cheese...nice snack!
Marinated chicken breasts/thighs [whatever marinade you like! I like a thyme and garlic concoction] grilled with grilled mixed veggies! I like anything in my fridge...cauliflower, sweet potato, broccoli and leeks combo is yummy!

Hi EUSDC Team,
I was thinking HOW to eat five vegetables each day. So I started creating a list of five. Here's my five. Would you share your five? Heads together we can have more ideas to meet our goal the next ( last) three days (Fri Sat Sun) of Week 2.

List:
Onion Soup (aperitif: no bread or cheese)
Red pepper with lunch salad or sandwich =2++++++
Vegetable Stew with Lean Beef/Chicken (Winter Stew!)
Celery stalk during meal prep if your a snacker ( this works for me...)
Stir Fry Vegetables with Lean Meat

What's on your list?
