Today - cleaned out my fridge, got rid of junk food that was lurking, went to the grocery store and bought fresh fruit and veggies. While at the grocery store, I read all the labels of what I bought.When I got home, I made fresh applesauce.
Had some for a snack this afternoon.
Had a salad with feta cheese for lunch.
Had more applesauce with leftover ham, baked beans, salad for dinner.
Happy happy.

I haven't a problem eating vegetables, but my wife only likes corn, peas and green beans. My wife is just starting to purchase vegetables so I can prepare my own vegetable meals and it seem to be working out, but the inconvenience of preparing two different meals at one time is a but daunting, as well as the clean up. I am eating my daily vegetable quota regardless of the preparation problem. It all comes down to how badly you want to be healthy.

Today will be a good day to eat my vegetables. I am having a meeting today at Subway. I know a weird place to meet. But I have a hard time with directions and this was the best place to describe to meet. I will have a flatbread sub with my favorite vegetables. Then dinner, all vegetables.

I think that I am getting 5 fruits & veggie servings in on most days, but the handy guide of serving sizes helps me to see what a serving is and not just assume, for example, that because there was fruit in my Greek yogurt that that was a serving of fruit. This is a great challenge. I'm going to make artichokes one of my new veggies. I have never actually cooked one, so, this is a great chance. My other challenge is to do something different with celery - make it a focus and not a filler. I found a recipe for celery salad from Giada on the Food Network that I want to try.

After just rapping up week 2, I am very excited to say that it has gone better than I thought it would. I am learning to be very creative and my meals are tasting really good. I have no problem getting in my fruits and veggies.

I love most veggies; in fact, it is easier to say what I don't like than what I do like. The list of dislikes is getting smaller the older I get, too. However, I am not doing as well this week as I did last week. I had Periodontal Surgery, so eating has been a challenge in general, but I will be back on track next week.

I really didn't do very well with week 2......didn't eat enough veggies. I'm going to repeat week 2 before I move on, hoping that I can do better. I like veggies. I've just been guilty of poor (or no) planning for meals.

I don't hate veggies, I just get bored with them. So this week I did get 5 servings of vegetables in for at least 5 days. I ate at least one totally vegetarian dinner. To make things more interesting I found a few all veggie recipes here on SparkPeople and made them..they were a hit..one recipe had spinach, asparagus and spinach (all fresh). My husband loves this.

I am loving veggies. It's amazing how much easier it is to choose veggies over other things when I'm doing a challenge. Now to keep it up beyond the challenge.

I have started going to the farmer's market every Saturday and stocking up on veggies. I am looking forward to the new crops, but have enjoyed the greens and root veggies so far. It is wonderful to buy something that was just harvested that morning or the day before.

Dead Last Finish is greater than Did Not Finish, which trumps Did Not Start.

I have a lot of trouble getting my veggies in since I don't prepare my own meals, so I can't sneak veggies in as easily. However, I have increased my amount a lot! Before this challenge, my goal was 2 freggies a day. This week, I have decided to shoot for 5 fruits and vegetables a day. Going from two combined to 5 veggies plus the fruit I have is just too big of a jump for me. But I have been able to get the 5 combined in! And Sunday I had 4 servings of vegetables!

I am just under five feet tall and now weigh 131 pounds. My goal is 120. I am losing weight very slowly, but I am heading in the right direction. Yes, meals sound about the same. I have 3 small meals plus 2 or 3 snacks each day. That way I never get too hungry because there is always another meal just around the corner.
My problem is going out to parties or to restaurants. I have no will power! I am learning to be more selective but I really love the taste of food! Not much I don't like!

1MANKNEY, our diets are pretty much similar. I also have a breakfast smoothie every day, with 3 portions of fruits and 4 of veggies. I rotate the leafy greens like chard, spinach, kale, bok choy etc. Also, I usually have a soup full of veggies at least 3 days per week. I eat salads with my other meals. I too, freeze the fruits, avocado, celery, and cucumbers that I use instead of ice in my smoothies.

Doing surprisingly well on the 5 veggies. I thought I did not like vegetables until I started listing the ones I like and found that the list is quite long even though I left off several vegetables that slipped my mind while I was listing.
My best places for vegetables are smoothies, soups and salads. I have a breakfast smoothie almost every day and it contains frozen chunks of veggie in place of ice cubes. Zucchini is one of the favorites. It has almost no flavor of it's own and is easily hidden in a chocolate protein powder smoothie. I also add in frozen chunks of fruits. We don't need to waste the excess from the garden. We freeze it in chunks and use it long after the garden is gone.

I have not been doing well on this challenge in wk 2 so far, but I plan on getting on the band wagon today with my veggies. Today I packed a lettuce salad with strawberries, oranges, and raisins and raspberry vinigarette dressing. So I know I have some fiber there, also a glass of V8 juice...I know counts as a veggie but doesn't have the fiber. Also have a serving of steamed broccoli for lunch w/ side of bites of steak. So for dinner I'll have to find 3 servings of veggies yet...Yikes!!

End of Week 2 I prep a large salad with many different veggies to take to work and then eat another salad with dinner and a vegetable. Banana in the am before workout and then other fruit as my go to snack. This one is easy because I have been doing this as part of my weight loss plan and each week trying out new fruits and vegetable and ways to prepare or sneak them into other recipes.

Eating lots of vegetables is an easy one for me. I love fresh vegetables and often take a container of red bell peppers, carrots, & celery with some hummus or Laughing Cow Light as my mid-afternoon snack.

I've added some new ways to eat vegetables--roasted parsnips and fresh kale salads. Parsnips get really sweet when they're roasted, so it satisfies my sweet tooth.

I'm just starting week 2 and it's perfect timing with our weekend trip to the Farmer's Market and all the new fruits and veggies in season. Last week I had a few days where I ate under my daily calorie range, but because I also track on Fitbit, it was good to see that overall for the week I was on track to lose a pound.

I'm having difficulty getting the vegetables in because of one medication, coumadin. I can't eat things that are high in Vitamin K which includes all green leafy vegetables. Is anyone else on coumadin? How are you handling this?

Well I went shopping yesterday for more veggies in my freezer and refrigerator. Its hard to eat 5 servings of veggies. I usually get 2-3 servings and same with fruit. So, yes...I will be pushing more veggies. Not sure what veggie I will try that's new, or a different way to make my veggie dish. So I'm looking...thinking. Hope you all are having a good journey on your challenge and get/stay healthy.

I do like veggies, but having a job fitting in 5 a day. I made an enormous vegetable lasagne on Monday with about 8 different kinds of veg - but maybe the pasta and cheese were a bit calorific. Still, learning to make veg lasagne (or any lasagne) from scratch was one of this year's learning targets! My sister and brother in law coming for the weekend. My brother in law can just about manage carrots and peas (and beans, but they're not in season). Trouble is, because I grow my own beans, I can't bear the thought of buying beans that have been shipped across the world so I only eat them in summer and early autumn fresh out the garden. So fitting in 5 veg a day will be a big challenge.
By the way, 2nd day of spring and we have snow in UK! Very pretty here.

I made the "mistake" of leaving my fresh veggies out on the table yesterday when I got home from grocery shopping. Before I could get them all portioned and put up, both kids and my husband had broken into them and began asking what they'd done to deserve the "treat"! We ended up using a lot of them as part of dinner. I love that my family appreciates fresh food!

My biggest challenge is just keeping my eating habits healthy when I'm not home. I'm now packing 2-4 fruits/veggies with me per day for snacking and lunch, but changing my 2 snacks to veggies/fruit is harder than I thought it would be. Plus, I feel like I'm eating all the time! At least I know I'm eating healthier than I have in a long time and it's all low calories.

Doing great so far by means of advance planning. I bought ahead and chopped/sliced/even precooked veggies. Fortunately in Texas fresh veggies are abundant and we have a weekly farm market in our community on Saturday mornings. Can't find everything, but I am trying new squashes, colorful chards, and fresh choy-type cabbages. Don't even know what some of them are called, but so far no disappointments! I used to live in snowy New England so I feel your pain...

This will be an easy challenge for me too because I love veggies. The challenge will be to find a different way to fix them. I also have a salad at least once a day. I bought a small spaghetti squash which is a favorite with a little marinara sauce. I'll browse the recipe section for new ideas.

I love veggies, but still have to be very intentional in my meals to get 5 servings per day. I eat a salad for lunch daily, and I just keep adding veggies to it, making it 3-4 servings in and of itself.

I like this challenge because it is good to focus on adding something to my diet, instead of focusing on what I am taking away.

My struggle is with keeping fresh veggies in the house. Life is busy, some weeks are far to busy to go to the store 3 times per week. And, I'm super-lazy, so sometimes I let veggies spoil for lack of proper preparation & storage. For example, I bought celery earlier this week, but failed to wash, cut, & store it in water within a day of purchasing it. Now, 4 days later, I'm not sure if it will still be edible for lunch today. It's a waste of food & money.

So, I guess my struggle is not with fresh veggies, but with laziness. Which bottom-lines most of my problems.

With my meal I am eating a 1/2 small banana with 1 Tbl of Dried Cranberries - this is working well for me. With veggies, I am adding more to my salads...

I am not a lover of bitter flavors. but i have learned to enjoy spinach. Green smoothies are the best.

I won’t be trying two new vegetables this week because I can barely afford the ones that are being shipped up (as is). It’s still winter in the north and with the increased costs of groceries, my vegetables are what are on sale. It’s also very basic vegetables, nothing fancy here. Kale is probably the most fancy vegetable for sale, at this time. lol!
