Quick and Easy Cabbage Roll Casserole

I bag of chopped cabbage
1 lb. ground beef
1 can of diced tomatoes
1/4 C. diced onion
1 C. brown rice instant
1 C. Low sodium broth or water
Salt and pepper to taste

Brown the beef and combine all the ingredients in a casserole pan. Bake 45 min. at 350. You can also use cooked rice, I use brown. You can top with grated cheese if you like.

Made the best caramel sauce yesterday by boiling a can of sweetened condensed milk
Bring a pan of water to a boil - be sure there is enough
To cover can by a few inches.
Once boiling place can on its side and turn down to low simmer partially cover and cook for 3 hours.

Yes, I've read that, Viv. Better not to take the lid off slow cookers!

Those Tortieres you asked about are meat pies. French Canadian, I think. Is that the same as pasties? (The only pasties I ever heard about growing up in Texas were worn by strippers, lol.)

You may also be aware of this, I was not. Every time you lift the lid on a slow cooker you need to add 15 minutes to the cook time.

French Potato Salad

2 lbs small salad potatoes
1 lb green beans
1/4 Cup chopped onion
1/3 Cup Olive Oil
4 tsp cider vinegar
2 TBS chopped fresh tarragon
2 T and pepper
BS chopped chive
1/2 tsp salt and pepper
Cook and slice potatoes during last 3 minds add green beans. Drain
Combine and mix remaining ingredients toss into warm veggies let sit at room temp one hour

Loaded Leek Soup
1 Medium Leek
1 1/2 lbs Potatoes (about two large)
2 Cups fresh Cauliflowerets
3/4 tsp rubbed sage
1/2 tsp salt
1/4 tsp pepper
4 Cups r4educed sodium chicken or veggie broth
2 TBSP olive oil
2 TBSP lemon juice
Sour cream (optional)
Finely chop white portion of leek. Slice the green portion in thin slices and reserve for topping.
Combine the white portion of leek, potatoes and cauliflower along with the seasonings and broth in a 4QT slower cooker. Cover and cook on low 6-8 hours until veggies are tender.
in a small skillet heat oil and saute the leek greens until golden. Remove and drain.
Puree soup when ready with and immersion blender or cool and do in batches in a blender.
Sir in lemon juice.
Serve topped with leek greens and sour cream if desired.

SPAGHETTI SQUASH AU GRATIN

Ingredients:
1 medium spaghetti squash
3 tablespoons butter
1 small yellow onion, very thinly sliced
1 teaspoon red pepper flakes
1/4 teaspoon garlic salt
Salt and pepper to taste
3/4 cup sour cream
1 cup shredded cheddar cheese

Directions:
Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a inch of water and microwave for 10 -12 minutes. In a medium sized skillet over medium heat, add the butter, onions, red pepper, garlic salt, salt and pepper and cook until the onions are brown in color.

Using a fork, scrape the insides of the squash and transfer to a small bowl.Mix the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.

Place into a 375 for 20-25 minutes. Put on broil in the last minute until golden brown on top.

6 Servings


Made this yesterday and it was delicious

Cornish Pasties
Preheat oven to 325
This makes 4 good size pasties.
Need 4 10 pastry rounds
1 egg beaten with a tsp salt

Filling mix it all together
12 oz. of rump steak or skirt steak cubed ( you can use ground if you prefer.)
1 Cup baking potatoes cubed
cup Carrots cubed
cup Rutabaga cubed
cup Onion diced
Salt & Pepper to taste
Butter (optional)
Spoon of mixtures onto each round keeping it to one side.
Add pat of butter.
Fold pastry over and roll and crimp to seal.
Brush with egg mixture.
Place on a greased cookie sheet and bake for 45 minutes or until brown.

I watch Ina Garten on the food channel a lot. Yesterday I made her Winter Squash Soup according to directions. I call it Butternut Pumpkin Soup.

It was delicious! I did not add croutons or any other garnish, except a little Parmesan on top just before I ate it.

I entered this into a recipe calculator and it comes to about 300 calories per serving. Makes 4 very generous servings.

This is owned by a woman who got her husband through some serious illness years ago following this type of diet along with his medical care. I followed their story back then and it was very serious.

Anyway, some good recipes here that are low on carbs, heavy on veggies.

I am on Atkins Phase 1 which is low carb.
Looked thru the recipes and couldn't use any of them.
Carbs were way too high.

White Chicken Enchiladas - I found this on PJ's Pinterest Page! I made them last night and served with crock pot pintos and some brown rice. Absolutely delicious! And an easy recipe.

Because Joe and I like spicy food, I added a 4 oz can of hot diced chilies in addition to the 4 oz can of mild diced chilies. I also added 1/8 (scant) teaspoon of cayenne pepper and I sauteed 1/2 onion (diced very small) with 2 tablespoons of garlic.

A few of the reviews had said this was bland, so that was another reason I added what I did. This dish turned out so well it will be one of our regulars!

I made the yogurt using Vivs recipe and i can recommend it,makes lovely yogurt smooth and creamy,it took slighlly longer than the recipe stated,i had the cooker on medium and i used a food thermomter to test that it reached the right temperature.
I have just had some for breakfast with granola and strawberries.

Does anyone have a recipe on how to make yogurt in a slow cooker,i would like to try making some,i know you can buy yogurt makers,but i don't want to buy one as it will probably end up at the back of the cupboard along with the bread maker and sandwich toaster etc.

This is the Quiche recipe I use and, I change of ingredients depending on what I have. I use store bought pastry crust most of the time.
My favorite is Gouda and pastrami.

I never used plain yellow mustard in savory dishes.
Today I use it often with great success.
When low carbing and low calorie eating the mustard adds a richness.
Surprising but it works for me.

Lemony Lentil Soup with Greens

Ingredients
2 teaspoons canola oil
1 small onion, chopped
1 large carrot, peeled and chopped
2 stalks celery, chopped
2 cloves garlic, minced
12 cups reduced-sodium chicken broth, plus more as needed
1 16 ounce package green lentils My store did not have green so I used brown.
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon salt
8 cups chopped kale leaves (about 6 ounces)
3 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
Directions
Heat oil in 6-quart pot over medium-high heat. Cook and stir onion for 3 to 5 minutes or until softened and translucent. Add carrot, celery, and garlic. Cook, covered, stirring occasionally, for 5 minutes or until the carrot is softened. Add the 12 cups broth, the lentils, basil, thyme, and salt. Bring to boiling. Reduce heat to low; add kale. Cook 30 to 35 minutes or until lentils are tender, adding additional broth if necessary. Stir in lemon juice and top with grated peel before serving.

Vegetable Soup (Pressure Canning Recipe)
Yield: about 14 pints or 7 quarts
2 Qts chopped, peeled, cored tomatoes (about 12 large)
1 1/2 Qts cubed and peeled potatoes (about 6 medium)
1 1/2 Qts 3/4 inch sliced carrots (about 12 medium)
1 Qt lima beans (I used fresh green beans snapped about 1 inch long)
1 Qt whole kernel corn uncooked (about 1 dozen ears)
2 C 1 inch sliced celery (about 4 stalks)
2 C chopped onions (about 2 medium)
1 1/2 Qts water
salt and pepper to taste
Combine all vegetables in a large saucepot. Add water; simmer 15 minutes. Season with salt and pepper if desired. Ladle hot soup into hot jars, leaving 1 inch headspace. Remove air bubbles. Adjust two piece daps. Process pints 55 minutes, quarts 1 hour and 25 minutes at 10 pounds pressure in a steam-pressure canner.

Do you have a lot of green beans. Here's the soup recipe for you!

Ingredients

1 cup chopped onion
1 cup chopped carrots
2 teaspoons butter
6 cups chicken or vegetable broth
1 pound fresh green beans, cut into 1-inch pieces
1 garlic clove, minced
3 cups diced fresh tomatoes
1/4 cup minced fresh basil or 1 tablespoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

In a large saucepan, saute onion and carrots in butter for 5 minutes. Stir in the broth, beans and garlic; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender.

Stir in the tomatoes, basil, salt and pepper. Cover and simmer 5 minutes longer. Yield: 9 servings.

Nutritional Facts

One serving (1 cup) equals 71 calories, 1 g fat (1 g saturated fat), 2 mg cholesterol, 779 mg sodium, 12 g carbohydrate, 4 g fiber, 3 g protein. Diabetic Exchanges: 2 vegetable, 1/2 fat.

To make it a meal in a bowl, I added kidney beans and brown rice. Since it's growing in the garden, I used dill instead of basil. If you have red and yellow tomatoes, the soup is really pretty.

Just submitted a recipe for KETO Turbo Coffee.
