My son makes the sweet potato fries - usually using the oven and adding cinnamon to them instead of salt - REALLY delicious

Other favorites include sweet potato soup - basically uses a carrot soup recipe but adds to it sweet potato and regular potato.

I tried the sweet potato "chips" tonight and it is definitely something I will do again! -- I just cut the slices thin w/ a sharp knife, spread coconut oil on them in small amounts over the top, and then sprinkled on some Himalayan pink salt. I microwaved them for @ 5 min and enjoyed them. I even got DD to try some as well as DH. Their response was positive!
