I fried up slices of potato with onions, peppers, and mushrooms. Drizzled a little RF dressing and added some salsa. (Wanted ketchup but we're out).

Hubby is bringing home some organic beef (or chicken). My New Year's goal is to stop eating industrial meat and poultry. I'm going to serve with a salad or steamed veggies.

It was a stressful evening and I was exhausted. I added 3 ounces of baked, leftover chicken to a can of Chicken & Dumpling Light Progresso soup. Oh my goodness! That was really tasty and soothing!

I ate spaghetti and added a bunch of stuff to the sauce from the fridge: red and white beans, chopped fresh basil, and a mix of turkey, ground beef and low-sodium dinner sausage. I read somewhere that Italian women make their sauce like that...adding a variety of meats and using what's on hand. Fruit salad for dessert w/ kiwi, fruit cocktail and banana.

I had breakfast for dinner: 2 eggs, some low-sodium dinner sausage, roasted red peppers and Ezekiel low-sodium bread. It filled me up and tasted so good!

Colleen~ I like salsa on salads, too. I picked up that tip from Ali Vincent's "Live Big" TV show.

Had baked tilapia with greens, Greek yogurt sauce (w/ dill), oven-roasted broccoli with a bit of grated swiss, and 2 slices toasted Ezekiel bread w/ a pat of organic unsalted butter. Tropical fruit salad for dessert (papaya, mango, asian pear, blackberries) and a glass of organic 1% (got a half gallon free this week at Kroger for buying some Quaker products).

I had the recommended meal on my food tracker - Ginger Rice with Almonds. But I added mushrooms, broccoli, and snap peas. Also 3 oz. of chicken breast. I made my husband's with soy sauce, which he's taking to work. (He doesn't really eat dinner much anymore, but maybe a bowl of cereal or oatmeal---eats most of his calories earlier in the day).
