We always made a fresh cranberry and fresh whole (peel and all) orange relish. It is quite tart and calls for sugar but you could use a different sweetener if you wish.

The only change I ever made to cranberries, was add some very fine chopped nuts, just to give it an extra zing to it. My husband and I like it this way.

Diet Soda Cake

Swap all but the cake mix for a can of diet soda. Stir 12 ounces of a diet carbonated beverage into your prepackaged cake flour, plop the mixture into a pan and bake it in the oven as directed on the box. There you have it: Cake.

The diet soda will cut the calories and fat in the cake recipe.

Pulled BBQ Pork - Slow cooker

1 Pork Loin Roast 2 - 3 lbs
1 pkg Lipton Onion Secrets dry mix
1 small bottle Jack Daniels Honey Smokehouse BBQ Sauce (You can use your fav but it changes the calories somewhat)

Put Roast in Pot
Sprinkle Onion Secrets evenly over top
Pour BBQ sauce evenly over the whole thing
Cook on low for 8 hours
Pull with forks and I serve mine on a bun.

I forget the name of this, but I make it from memory from WW, call it:

Yummy Sweet Potatoes

4 sweet potatoes
28 oz. can of crushed pineapple

Pierce sweet potatoes with a fork and roast in 400 oven until tender.
Remove potato flesh from skins, put flesh in a serving dish, discard skins.
Add pineapple and salt & pepper to taste, mash together and serve.
(Reheats well.)

Pumpkin Fluff (Weight Watchers)

Ingredients
15 ounces pumpkin
1 (3 1/2 ounce) package vanilla instant pudding mix, fat free, sugar-free
1/2 cup skim milk
8 ounces Cool Whip Free, thawed
2 teaspoons pumpkin spice

Directions
1. Using mixer, blend pumpkin and spice with the milk and mix.
2. Fold in Cool Whip. Chill.
3. Serve with ginger snaps or vanilla wafers.

Italian Pork Tenderloin with Roasted Sweet Potatoes

Ingredients

Vegetables
1 tablespoon olive or vegetable oil
1 teaspoon Italian seasoning
1/4 teaspoon seasoned salt
1 clove garlic, finely chopped (about 1/2 teaspoon)
2 medium dark-orange sweet potatoes (about 1 lb), peeled, cut into 1-inch chunks
1 medium yellow onion, cut into 8 wedges each

Pork
1 pork tenderloin (about 1 lb)
1/2 tablespoon olive or vegetable oil
1 teaspoon Italian seasoning
1/4 teaspoon seasoned salt
1 tablespoon grated Parmesan cheese
1 tablespoon chopped fresh parsley, if desired

Steps
1. Heat oven to 425F. In large bowl, mix 1 tablespoon oil, 1 teaspoon Italian seasoning, 1/4 teaspoon salt and the garlic. Add sweet potatoes and onions; toss to coat. Spread in 9x13-inch pan. Roast uncovered 10 minutes.
2. Meanwhile, brush pork tenderloin with 1/2 tablespoon oil. In small bowl, stir together 1 teaspoon Italian seasoning, 1/4 teaspoon seasoned salt and the Parmesan cheese.
3. Move vegetables to center of pan; place pork tenderloin on one side. Sprinkle seasoning mixture evenly over pork. Insert ovenproof meat thermometer so tip is in thickest part of pork.
4. Roast uncovered 20 to 25 minutes longer or until thermometer reads 155F. Cover pan with foil; let stand 5 minutes or until thermometer reads 160F. (Temperature will continue to rise about 5F, and pork will be easier to carve.)
5. Cut pork into 1-inch-thick slices; arrange on platter with sweet potatoes and onions. Sprinkle with parsley.

Pumpkin Spice Muffins

1 box spice cake mix (I prefer Duncan Hines)
1 can pure pumpkin
2 tablespoon water

Preheat oven to 350*
Put all ingredients in a large mixing bowl. Beat with mixer until thoroughly mixed. Spoon heaping spoonfuls into muffin tins sprayed with PAM or lined with papers. These do not rise like regular muffins.
Bake for 35 minutes or until a toothpick inserted in the middle comes out clean.

Calories 203.3 per muffin according to the Spark recipe calculator.
