Forgive me for not having quantities, I tend to just throw stuff together...

I mixed together ground up pork rinds, with parmesan cheese, garlic powder, salt and red pepper. Dipped my boneless chicken breasts in it. Fried the chicken in about 1/4 inch of oil for 5 minutes on each side. Then put them in the oven at 325 for about 10 minutes.

To save for later, I sliced the chicken after it cooled, divide it into servings, put in freezer bag and freeze. Now I can just take it out of the freezer, thaw it or heat it up. Great on salad, or top with a little marinara sauce and mozzarella cheese.

YUM!
