Ole low carb tortilla with scrambled egg/whites, veggies, and spinach with a dash of salsa. Also Ole low carb tortilla with peanut butter and a banana.

I started crushing 3/4 c Bran Flakes and adding egg white and a bit of milk. Cook as a pancake and top with blueberries and Smucker SF Breakfast Blend. Sometimes I Greek yogurt on my pancake instead of syrup to get more protein. Top either with walnuts. LOVE!!

Make sensible Sweet light Swiss Miss hot chocolate. Add 1/2c oatmeal and cook in the hot chocolate drink. Top with walnuts. Sort of reminds me of those delish no bake cookies. This can also be a great treat.

I get a 8 oz container of non fat or low fat plain yogurt, 1/2 cup of the trop 50 orange juice and 2 tablespoons of half & half milk. Shake it all together. I really like it.

This is going to sound odd, but I generally have a salad for breakfast. I make sure it has some protein and fat with it. Like cheese and chicken or avocado and salmon. I often get these bistro salads from walmart. They range $2.50 to $3 Calories 230 to 320.

I avoid carbs like the plague. They raise my blood sugar. So I eat bacon and eggs, cheese, pancakes made with protein powder replacing the wheat flour.

I have coffee with a little whipping cream, no sugar. No orange juice or oatmeal, too high in carbs for me.

"Banana pancake" - ripe banana, mashed up with an egg, and cooked in a frying pan with a tiny splash of olive oil, as you would cook a pancake. Protein, fat and carbs all in a very simple breakfast (or lunch, or snack, or supper....etc, lol).

I like baked oatmeal with peaches, blueberries and almonds. I don't like milk, so I top it with a little vanilla yogurt.

What I was eating for breakfast, turned out to be the wrong stuff, and I thought I was eating healthy. I was having a small juice size of orange juice, and frosted,shredded mini wheat ,and small cup of milk. I came here to look for other ideas, that I could have. I will be going to a class on diabetes, but that's a few days off, not until July 7 . I do know that I can have a hard-boiled egg, slice of toast, with peanut butter on it, or scrambled egg. Other than that, I've been wondering what foods, I can eat?

I am always stumped about breakfast! What I have been doing is trying not to be so "breakfasty" about it. Yesterday I had black beans, leftover steamed veggies and a peach.
I will often have mushroom and spinach omelets, and try to add a whole fruit or veggie.
I gotta admit that mushrooms have been a lifesaver for me!
The ideas are great to see! especially with glucose management!

I like the egg white scramble with avocado and bacon bits and maybe salsa in it with whole wheat toast and fruit idea :D I am into the oatmeal square cereal idea :D Have you guys heard of that cereal before?

Have you tried oatmeal with fruit? Blueberries and strawberries are great. Add a drop or 2 of Stevia if you like your oatmeal sweeter.

This morning I had:
1/2 banana
1 Hard Boiled Egg
1/2 of a Lender's Bagel with 2TSP lowfat Cream Cheese
Bottle of Water

Another option for eggs I do sometimes is I purchased from the Dollar Tree store one of those microwave omelet containers. It's so easy to make a healthy omelet using these...

in the container, add the following:
1/2 cup of egg beaters (or you can use 1 large egg scrambled & 1/4 cup of egg beaters)
1/4 cup of chopped bell peppers (colored --red or yellow are my favs)
1/4 lowfat shredded cheese
Baby spinach, I use approximately 10-12 leaves
Salt/pepper to your taste

Add each ingredient to the omelet cooker beginning with the egg mixture & working your way down the list, close the container & cook in the microwave on normal seeting for 90 seconds. I like to flip my container over & cook for another 30 seconds as I don't like runny eggs. Sometimes I will have this with a slice of whole wheat toast & 1tsp of light butter. Or Sometimes I will chop up the cooked omelet & make put it in a FLATOUT multigrain wrap. Very tasty & filling.

MERIDITH I read this just this morning. It is a good way to start the day with high fiber choices they do keep you feeling full. I am big on oat bran with banana and there are lots of Protein choices too. Use your search box on Spark not the web, I just put in

"Delicious Ways to Boost Fiber Intake"

Try. " Protein Breakfasts for diabetics".

Just do it on the site and the answers are usually straight forward from the nutritionist. emoticon emoticon emoticon to Spark

I often eat leftovers. If I've made some kind of meat the night before I will eat the leftover for breakfast. I have had a hamburger or sausage (all stuff going low carb).

Hi, Meredith!

I have one piece of whole-grain, high-fiber toast and two tablespoons of peanut butter, with an orange. I know bread isn't the best thing for blood sugar, but I can't seem to give up the breakfast I've been eating for so long. My nutritionist said just to make sure the bread has 3 grams of fiber per slice -- that's not so easy to find! But I have found some. I try to make sure the first ingredient is whole wheat.

I'll probably switch it off with eggs now and then.

I'll be interested to hear what others eat.

I've been doing well with getting my eating under control and blood sugar within guidelines. But when it comes to breakfast, I seem to draw a blank other than eggs/egg white omelets with stuff in them. I generally eat a yogurt snack in the afternoon, so don't use that for breakfast either. Oatmeal isn't working well in my plan, so I suspect cereal will not either. What are all of you doing in the a.m. besides an egg-based breakfast?
