Yes! Leftovers are wonderful!

I'm really having to think through my shopping. Because I always tried to keep things simple, I'm not used to having to estimate so many ingredients. Meanwhile, I run out of seeds, but have so much broccoli that it starts wilting, or the lettuce gets icky. I think I'll need to adjust my shopping expectations, and plan to stop at the organic market (only a mile from my home) on the way home from outings, to stock up on the shortlived items. If it becomes a habit, it'll really help while I'm at home.

Not sure what I'll do when I'm traveling (half the year), but at least it's easy through the summer.

I find if I cook up a bunch of stuff ahead of time and have several meals ready really helps me out cause they I'm not having to chop and cook, ect

I've been thinking a lot about what makes me give up on a plan, and I think I've nailed down one very key factor. I tend to over-simplify things, and then I get bored.

For instance, what makes a salad? Greens and dressing. We can add lots of other things, and last night I had a fabulous salad for an early dinner that kept me satisfied all evening and all night. The difference is that I added hemp seeds, pumpkin seeds, a small amount of cheese, broccoli.

I think the seeds, especially, helped me feel full and added a lot of nutrition that I wouldn't have ordinarily bothered with. I'm hoping to remember this months down the line if I start to take short cuts on my salads or other meals. Sometimes the little things (a tablespoon of seeds, or whatever) really make a huge difference.

Any tips that you've found help with things that can get in our way of healthy nutrition?
