White chocolate mac Luna, banana, clementine, red grapes, whole wheat tortilla with brown rice and Tofurky Italian sausage, ginger-lime tropical fruit salad, chickpea and sweet potato curry with tomatoes and spinach (lots of garlic and ginger, too!), some nice non-dairy dark chocolate with pecans for dessert. (I am not one to skip dessert, lol.)

I learned an interesting thing today: that historically, "dinner" has meant the most substantial meal of the day, regardless of what time it is eaten. The term originated around 1300, at which time it referred to lunch, since farmers and other laborers needed that midday energy to sustain them through the afternoon and evening. When big, fancy late meals came into fashion among the upper classes, that came to be known as dinner.

SO, today I had a breakfast-y "dinner" at noon! Tofu scramble with onions, broccoli, red peppers, and mushrooms, and French Toast Muffins from the Everyday Happy Herbivore cookbook by Lindsay Nixon. I whipped Earth Balance with maple syrup and cinnamon to put on the muffins -- definitely NOT "health food," but I wanted a treat for Dave and myself since he went back to South Carolina today for funeral #2, and I just get so damn sad when he's gone.

Luna bar a bit before working out.

Ginormous salad for dinner: romaine, baby spinach, tomatoes, cucumbers, and shredded carrots, plus a little leftover lentil and grain salad from the restaurant last night, tossed with a maple, almond butter, and cider vinegar dressing -- all in a comically oversized bowl, lol. Another bit of scramble, too.

Pineapple, papaya, and toast for late snack.

Odwalla bar, banana, and green tea for breakfast. Tofu and pasta with garlic for lunch. Grain and lentil salad and veggie-packed cheeseless pizza for dinner.
