I had leftover roast lamb and raosted vegetables, so I made a beautiful curry and added more mixed frozen veg and a green apple. Served it with brown rice. Absolutely delicious

I made dolmades with brown rice and added grated zucchini and carrot. Great taste. Good ways to increase the vegies. Helps the brown rice because of the extra moisture.

I never precook the carolina rice or the bulghur wheat before stuffing the veggies, but I can see how some precooking would be necessary for brown rice.

this is what i just had for lunch
but i didn't know how many calories!
so i went to the recepie cacoulator
and to my surprise it wasn't much.
well i don't eat potatoes and i only used 1 cup of olive oil.
but i feal stuffed and with almost no calories
Fat: 20.3g
Carbohydrates: 21.3g
Calories:270.1
Protein: 2.8g

I used a short grain brown rice... the generic brand from my local super market... I think I may have over-cooked it before I stuffed the peppers and tomatoes.

My Greek mother-in-law always makes yemista with carolina rice and they are perfect. I've never thought of using basmati rice, I gues I associate it with Indian/Asian cuisine rather than Greek. I'm surprised that brown rice went mushy because it usually takes longer to cook, and needs more water, than white rice. Was it perhaps a 'quick-cooking' or 'instant' type of brown rice? Like Anna I've sometimes used bulghur wheat (plighouri--interesting to see how many different variations there are on the name) but Husband doesn't like it.

I've made dolmades with brown rice and have even
used pyrgouri or cou cous when I was out of regular
rice. To make them healthier, I add mushrooms,
grated carrot and zucchini. Use whatever is on hand.
I could not believe what that thoughtless papa said.

can it be done? I tried gemista with brown rice and they were just mushy! DIS-gusting. I usually use regular basmati rice... am going back to that.
