Strawberry Liqueur

2 kg fresh strawberries
1 kg granulated sugar
1 L tsikoudhia or tsipouro, grappa, vodka, white rum etc

Makes c 2L, c50 servings.
'Wash strawberries, drain thoroughly, hull.
Cut smaller strawberries in half, larger ones in quarters.
Layer in a French Kilner jar, alternating with sugar. Top layer should be sugar. Seal jar, leave for 24 hours, give it a good stir to dissolve sugar, leave for another 8 hours maximum.
Set up chinois or large sieve over a saucepan. Tip contents of jar into chinois, allow all juice to drain into saucepan. Bring juice to a rolling boil, turn down heat and simmer 5'. When cooled completely, add equal volume of Cretan tsikoudhia, or unflavoured tsipouro (without glykaniso), or vodka or other neutral spirit such as grappa or white rum. Strain and bottle. Best drunk within a few months to retain the bright colour, it darkens with time.
Freeze the strawberry pulp remaining in the chinois in a shallow Tupperware container. Blenderise frozen chunks with milk for an incredibly thick milkshake.
