What is EVOO? ADDING THE OIL AT THE END IS A GOOD IDEA.

The summer is coming ( despite the rainy weather today) and my mother in law brought me some fresh fasolakia that I made the traditional way, with tomato sauce. A delicious food with not too many calories. The only problem is to resist the feta cheese that HAS to go with that dish ;)

As for the EVOO, yes, it is high in cals here in SP and high in fat, but whenever I go over in my counting because of the EVOO I'm not too worried, because it's good fat. I'm talking of course about raw EVOO and not fried - that's a whole other story. Even in dishes like the fasolakia I always add the olive oil at the very end (and not too much of it really) so it can be almost raw.

What did you have today? Let's share some yummy healthy summer recipes!

Traditional Greek cuisine is one of the most healthful and delicious on earth. The epitome of the Mediterranean diet, brimming with nutritious ingredients such as extra virgin olive oil and sun-ripened vegetables and fruit, with so many meatless (nistisima) dishes in its repertoire, there's something for everybody here, from fans of cucina povera and vegans to the most demanding gourmet. OK, so some recipes will need to be adapted to reduce the evoo (delicious but too high in calories for most diet plans), but even then there's plenty to tickle your taste buds.
I'm sure every member here has at least one family favourite recipe that they can share here.
To make the recipes easy to find, please start a new thread in this section for each recipe, and use the same thread only to ask questions regarding each recipe.
