I know that bakaliaro tiganito with skordhalia hardly counts as a diet food, but 25th March only comes once a year so if you're going to indulge here's a tip to make the batter extra crunchy:
Use very cold water. Add one sfinaki of tsikoudhia, tsipouro or even ouzo and reduce the water accordingly. Sift the flour onto the water/tsikoudhia mix and stir in lightly. Don't worry about a few little lumps, it's best not to overmix, or the batter will become tough like bread dough.
