Let's share some favorite healthy dishes. Please add a dish you really like. Here's mine.

This is one of my favorite recipes. A lady in Aegina was serving this as a dish in their small restaurant. She was foreign and spoke English. I had to ask her for the recipe and she gladly told me as I wrote it down. Enjoy!

Taboule a-la-lady in Aegina, year, 2004

75 grams of bulgar Wheat (Plegouri)
1 C parsley
3 T fresh mint
1-4 onions chopped, it is up to your palate for onions.
½ cucumber, finely chopped
2 t extra virgin olive oil
Juice of one lemon
Salt and pepper
1 box of passata

Directions: Soak the bulgur wheat in tomato puree and water (however much you want but I just make sure the wheat is all being soaked.

Drain the wheat in a small sieve. Then pat it with a cloth so it gets as dry as you can get it. Get rid of as much moisture as you can.

Place wheat in a bowl and add remaining ingredients. (The salt and pepper is to taste)

Toss thoroughly and refrigerate. Tastes better second day.

Here’s the fun part, ADD WHATEVER ADDITIONAL veggies that you want:

Shredded carrots, olives, artichoke hearts, grilled eggplants, red, green, orange peppers…whatever you like. I also often add a bit of Feta cheese but this will amp up the calories. So, I often add it for the “kids” and DH. Just have fun with it and enjoy.
