Whole Wheat Pasta with Feta, Mushrooms, Spinach and Tomato


Minutes to Prepare: 20
Minutes to Cook: 10
Number of Servings: 1


Ingredients:
3/4 cup of Whole Wheat Pasta (cooked)
1/4 cup of Fresh Mushrooms (slices or chopped)
6 leaves of Fresh Spinach (chopped)
1/2 of a Plum Tomato
1/4 cup of Feta Cheese (crumbled)
1/4 tbsp of Extra Virgin Olive Oil
A pinch of Garlic Powder


Directions:
Cook pasta as directed, al dente.
Meanwhile in a sauce pan, heat oil over low heat.
Add mushrooms and tomato and cook till heated.
When pasta is finished, drain and return to pan.
Mix mushrooms, oil and tomatoes into pasta.
Add feta, spinach and a pinch of garlic powder to the pasta mixture.
Stir and enjoy.

Syn's Healthy Goulash Recipe

Roe, here is how I made Goulash--a little healthier than regular...

1 package of ground turkey about 20 oz I think
1 onion separated
1 can of chopped tomatoes
1 can tomato sauce
1 package of elbow macaroni
cheese

I cooked the turkey with 1/2 the onion, deglaze with whatever you use, paprika, salt & pepper, a little garlic, and a little ketchup--whatever else you like to spice with.
Then I added the 2 cans of chopped tomatoes & sauce
about 1 to 2 cups of water depending on how long you simmer(add more if it gets too dry)
1 package of uncooked whole wheat macaroni ( I used enough to make 6 cups)
1/2 the onion (I like to be able to see the onion in a dish, so I add more to simmer)

You can add different spices, and You could add extra veggies, but I was lazy...Hmm, I think I'll make it again tonight....

I just cooked it covered for about 30 minutes until the pasta was cooked. I served it with a little cheese on the top--whatever I have. I have shredded Mexican cheese mix. Hub LOVED it last time! He's got a new favorite now...AND it's so darn easy to make!
