Coconut Oil Candy - I usually double this recipe

1/2 cup melted coconut oil (do not melt in microwave - I use a small sauce pan)
1/4 cup cocoa powder (the baking, unsweetened kind)
2 T honey (or I use 2 droppers of liquid stevia)
1 tsp vanilla extract (I use 1/2 peppermint and 1/2 coconut extract)
1/2 cup unsweetened shredded coconut

Mix all in the sauce pan once the oil is melted and spoon into silicone ice cube trays. Put in freezer for 30 minutes then transfer to fridge - or just put into fridge for a couple of hours. You can also just spoon into mini muffin tins - anything you can pop them out of after they harden from the cold. I pop them out of the silicone tray and keep them loose in a ziplock bag in the fridge. Just remember they need to stay cold because coconut oil has a low melting point and they will get too soft at room temperature. They are almost too hard to bite when frozen and just right from the fridge.

You can use any extracts you want. You can omit the cocoa powder if you want. You can omit the shredded coconut and do orange extract with some grated orange. You can add almonds if you want - the recipe is simple and you can experiment with the flavors! ENJOY!
