Got from a friend on another page:

Crockpot Fajitas (made plenty for 4)

2 yellow onions
2-3 red and green bell peppers
3-4 skinless chicken breasts
1/2 - 1 package of taco seasonings (or make your own, see below)

Place the vegetables in the crock pot. Lay the chicken breasts on top. Sprinkle in the taco seasoning. Cook on high for about 4-5 hours or low for longer. My chicken was frozen. I just rinsed it off. The water from the chicken and the vegetables make their own juice. No need to add water. My boys actually liked it. The veggies do get a little limp, but rolled up in a tortilla, you wouldn't notice. You can shred the chicken if you want or keep it in bigger chunks. Of course you can add more veggies or less depending on your likes. I made spanish rice, heated up a can of vegetarian refried beans and sliced up an avocado to go with the fajitas. Oh, and added some shredded cheddar as well. For me: I just had the chicken and veggies.

Homemade Taco Seasoning
Source: Allrecipes

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container. Yields about 2 3/4 tablespoons.

To use: Use about 2 tablespoons of the taco seasoning for every 1 pound of meat. Use more or less depending on your preference. Brown meat and drain the fat. Add your taco seasoning along with about 1/2 cup of water. Simmer and stir until water is absorbed. If you want more of a sauce throw in about 2 tablespoons of flour with the water.

WW Feta Chicken Burgers

1 lb ground chicken
6 oz crumbled feta
1 tbsp ground oregano
1/4 tsp salt
1/4 tsp garlic powder

Preheat grill or broiler. (You can also use a George Foreman grill)

Mix all ingredients well and form into 4 individual patties.

Grill or broil patties until internal temp. of burgers reaches 165 degrees F, or about 7 to 8 min. per side.

Yields 4 servings (or 4 patties).
