Healthy Pumpkin Chocolate Chip Muffins

Wet Ingredients:
1 (15oz) can pumpkin puree (not pie mix)
1 1/2 cups sugar free maple syrup
1 1/4 cups water
1/4 cup coconut oil -melted
3 whole eggs
1 tsp vanilla
2 T chia seeds

Dry Ingredients:
1 cup almond flour
1 cup coconut flour
1 1/2 cups flaxmeal
1 tsp salt
1 1/4 tsp baking soda

Topping:
80 Ghirradelli dark chocolate baking chips
1/4 cup roasted pumpkin seeds (pepitas)

Mix wet ingredients together with chia seeds. Let sit 10-15 minutes to plump the chia seeds.
Mix dry ingredients together. Add to wet ingredients. Divide into 20 heavily sprayed muffin tins. 1/4 cup fits into each muffin tin. Top with 4 chocolate chips and divide the pumpkin seeds evenly over the 20 muffins.

Bake at 350* for 25 minutes (toothpick should come out clean).

1 muffin is 151 calories, 11 grams of good fat (essential), 11 carbs (low net carbs due to high fiber) and 5 proteins.

Egg Cups

Finely chop any veggies you like. Fill heavily sprayed muffin tins half way with veggies.
Add cheese and/or turkey sausage or bacon.
Crack one egg on top of each one.
Break yoke with a knife and stir around to make the egg sink through the veggie layer.

Bake at 400* for 10 minutes or until set.

Mocha Ricotta Shake

1/4 cup part skim ricotta cheese
1 cup 1% or less milk
1-2 tsps of unsweetened cocoa
1-2 tsps of splenda or other sweetener of your choice
1 tsp vanilla

Blend together, add ice to the blender as desired

-- swap out the cocoa if you prefer vanilla, add fruit if desired
-- drop the milk and mix other ingredients together for a mousse like dessert

makes a great breakfast or snack... very satisfying and filling

EXERCISE/ DIET AND BEHAVIOR MODIFICATION!!!
