cucumbers with yogurt Greek style

Mix together:
1 pint yogurt
2 cucumbers cubed
1 garlic clove minced
1 Tablespoon olive oil
salt and pepper to taste

Serve with:
chilled cucumber strips

I cook vegetables with beans &/or lentils also just fry onions & garlic in hot oil then add veggies & the beans & cook till done

Sure-I was happy to share. I am allergic to walnuts and literally never put even one into my mouth or it is instant canker sores!! emoticon … (I think most of us are able to make allowances in our menu)

Wow...that is excellent! I love salads and chickpeas.

I have not gotten myself to have a vegetable smoothy.

Unfortunately, I am highly allergic to fish, especially salmon but I add lots of olives other forms of Omega oils.

These following meals have become our way of life..... emoticon

Every day we eat a hearty green salad, (with a mix of greens) ... topped with broccoli and cauliflower florets, carrots, fresh raspberries, or red grapes, chick peas (often) and sprinkled with sun flower seeds.

Daily green drink: Kale, celery, carrots, red grapes--frozen pineapple, bok choy, and a half cup of grape fruit juice to offset the 'green dominance' ... I usually add a generous slice of fresh ginger too.

Frequent dinners:
Vegetable stir-fry with Tofu for dinner over brown rice.
Vegetable soups---any numerous kinds of fresh veggies, with either lentils or chickpeas.

Fresh salmon ... baked potato (half) broccoli and sautéed mushrooms.

Our diet is largely made up of vegetables, a reasonable amount of fruit, red grapes preferred over red wine. Also about 1/2 of almonds daily and Oatmeal for breakfast with fresh raspberries, and a spoonful of ground flax powder.

Today I made some peas and potatoes.

Med. Way: Legumes: Peas
Tubers: Potatoes
Poultry: Chicken

I first sauteed some potatoes and onions in a little oil, then I added a cup of water and a bag of frozen peas. Then I simmered it adding a chicken breast until tender; about 15 minutes. I added oregano, parsley, and garlic powder, and only added a little salt to my personal dish.

That's it!

I buy some really big bags of frozen veggies from Costco. It is so easy to steam and lightly stir fry them with chicken or over a little pasta. I am allergic to garlic and that makes it difficult so I sneak in a little now and then with my olive oil.

The salad looks really good. I have just started this plan at my Dr's. suggestion. I love almost every fruit and vegetable there is plus poultry and seafood.

Green Bean, Farro Salad with Walnuts and Basil by Cleveland Clinic Wellness Editors



Seasonal favorites like green beans, cherry tomatoes and basil shine like the nutritional stars they are when they are paired with nutty-flavored farro. Heart-healthy toasted walnuts add a delicious crunch to this truly tasty salad that’s perfect as a packed lunch or as a side dish at your next outdoor dinner.

Yield: 4 Servings

Ingredients:
1 cup farro*
1 pound green beans, stems removed
½ cup walnuts
½ of a red onion, thinly sliced
1 pint cherry or grape tomatoes, halved
1 tablespoon whole grain mustard
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
½ teaspoon freshly ground black pepper
½ cup fresh basil leaves

Instructions:
Fill a medium saucepan with water almost to the top; bring to a boil. Add the farro and cook until tender, 25 to 30 minutes. Drain into a strainer and run under cold water to cool.

Meanwhile, fill a large saucepan with water almost to the top; bring to a boil. Add the green beans and cook until tender, 3 to 5 minutes. Lift them from the boiling water with tongs, and transfer immediately to a bowl of ice water to cool. Drain and pat dry with paper towels.

Heat the oven to 350°F. Place the walnuts on a small sheet pan and bake until toasted and fragrant, about 10 minutes. When cool enough to handle, chop coarsely.

In a small bowl, whisk together the mustard, vinegar, oil, and pepper.

In a large bowl, combine the farro, beans, walnuts, onion, tomatoes, vinaigrette, and basil. Toss well and serve.

Nutrition Info Per Serving: (approximately 1¼ cups) 480 calories, 15 g total fat, 1.5 g saturated fat, 19 g protein, 68 g carbohydrate, 18 g dietary fiber, 7 g sugar, 0 mg cholesterol, 75 mg sodium

*NOTE: There are a variety of different types of farro — whole, semi-pearled and pearled. The whole grain variety retains the largest amount of fiber- and nutrient-rich bran but also takes the longest to cook. It can also be soaked overnight for a shorter cooking time. Semi-pearled will take less time and retains a good amount of the nutrients and fiber. Pearled farro has the shortest cooking time but the least amount of nutrients of the three varieties. Make sure you know which variety you are purchasing and follow the instructions accordingly. It’s also important to know that farro is not suitable for people with celiac disease or sensitivity to gluten or wheat.
