There is nothing wrong with veg for breakfast!! Frittata is great! I often have baked beans with Tabasco sauce or a bit of chilli to spice them up. Mozarrela with tomatoes, basil and olive oil is another good one, very Mediterranean. Bake tomatoes with basil and pop an egg in the middle is another. Mixed bean salad with sweetcorn is nice. There is a spark recipe for mixed bean salad, sorry have not got the link! Just look up mixed bean salad.

I know I had a recipe for a greek frittata. Not sure if I got here or somewhere else. Will have to look for it.

We are having a potluck brunch this weekend. My sister is making baked french toast and has asked me to bring something. I would like to bring a vegetable dish, but don't know of many that are suitable for breakfast. How do you incorporate vegetables into breakfast? Your recipes and suggestions are welcome!
