I have done some cooking today to make it easier through the whole week.
I bought a new mellow scooper and an air popcorn popper to make my favorite snack healthier.
And I have been a detailed menu planned out for the week, as I did last week. I have found that during my shopping I have made some changes to go along with some specials that would help cut my grocery bill.
So things are going well..... :) Getting more organized each week, thanks to these challenges.

Week 2 is going well! I've been cooking each day with lots of fruits and veggies that I bought at the Farmer's Market. Each day has been a new recipe that I found on Pinterest or Cooking Light. I'm making an angel food cake for strawberry shortcake tonite - our first dessert in a long while.

Holly smokes. I never thought I would see this day again I never thought my weight would ever go down. I thought it would take forever FOREVER to lose even 1 pound. Then I hurt my knee a weeks ago. I wasn't able to really move let alone work out. I thought for sure my weight was gonna go up. But this morning when I went to a friends house to get ready for church. I went into the spare room & got on the scale. I was SHOCKED when I read what it said. I got off & got back on 4 times to read what it said. It said I dropped 7 SEVEN pounds. The only real new thing I have done was drink more water & eat less RICE. I feel so good now. WOOHOO

Hello & good luck all new comers. I hope you all like it here. I know I do. I wish you guys all the luck with your goals. To anyone who lost wieght. Thats AWESOME. SO proud of all of you. But if you gained a pound. It's ok your still AWESOME. You will do it next time. Your all awesome beautiful & spceial. WooHoo go team. But as for me.....

This week is not looking good. This is why I haven't been chatting much in my groups. My left knee is still hurting, but today there was a crunchy feeling today. Then my left arm as this numb tingly feeling. I tried to take the pain but I couldn't. I ended up going to the E.R. I wasn't there long. I got 3 x-rays each of my knee & arm. Nothing is broken. But the numb in my left arm is due to a deep bruise when I fell. I might have pulled a mussel or a ligament in my knee. It all should heal in a few days to a week. I do have an appointment to see my doctor next week. Back in the 90's I already had 2 knee surgerys on the same knee. So that's why i try to be very careful & worry about my left knee.

But on a good note. This week I have been doing sit ups or as they say "Crunches". I have always hated sit ups but I gotta do something to stay on top of this diet & this time around. I did 20 sit ups yesterday. Not bad but getting better.

Just starting my Week 2 today, but in addition to my usual practice of cooking my proteins (salmon, chicken breast, turkey, etc) on my day off I think I'm going to add a big pot of soup and maybe some lean spaghetti on cooking day. I already have a blender(I love that thing, use it for so many things) and a rice cooker, but I may invest in a small crock pot as well. I love the idea of making a running list, keeping it on the frig and organizing it according to the way I navigate the grocery store.

Week two is just starting for me but I plan on it going well. I'm making a big batch of soup today (I've been doing that for months now) for lunches during the week.

I'm using my crock pot on Monday for Chef Meg's Vegetable curry. My meals are all planned. The groceries are purchased. We're ready to go.

I love eating healthy and my family does to. It has taken a while, but they have come around. They still sneak some junk in when I'm not around but I'm ok with that. It's a treat for them - and treats are just fine.

My husband thanked me last week. He works a physically demanding job and he said to me that he is one of the healthiest people at work. He has more energy. Never gets sick. Feels generally good. And although he would like to say it's because of his healthy lifestyle, he knew that it had everything to do with the way I fed him at home and the options I had for him to make meals with. I really appreciated that. Made it all worth while.

Getting better. Working on getting healthier snacks for me and the family. Seems we all are tired of junk food. We get that way sometimes.

Think I have been in week 2 or a while now so I am going to move into week 3. I think I am finally ready!!!

I am having to readjust my thinking. I thought I had found a healthy alternative to toast with my breakfast - they're called "Thinfuls" - skinny little buns ... figured if I had 1/2 of one I'd be O.K. ... H-m-m-m ... still not good for LOSING the weight ... seem to be O.K. for STAYING the same ... emoticon

Hi all I kind of got to start up again with week 2. I got off track due to family issues. But I am ready to get going again! Seems to be my thing this year. Start up get going and fall back get up and get going again.

This is a good time for a change in my diet. My daughter got a job and after school activities so she is not home much for dinner anymore. So I am focus on smaller meals just for me and my husband most days. My kid like most who are working will eat at work. She is working at McDonalds. ekk. lol. Good thing burgers and fry's do not agree with her all the time because. She likes the wraps and salads so I don't have to worry about her too much that way.

So looking forward to getting though this challenge for week 2.

This week is going realy well! Last week i cleaned out my kitchen so it wasn't so tempting to go grab a junky snack. I have been using my crock pot alot! I have tried so many new recipes with it that i am hooked. My family is enjoying them as well. Its a bonus knowing they are eating healthier too. I make enough for all of us plus a little extra servings to last a couple more meals for during the week. Its so convenient when i am trying to juggle so many other things in life.

week two went great I am noticing that my clothes fit differently and have went down a size.. I have quit all fast food and soda pop, and am eating healthier. I made rosemary chicken and rosemary red potatoes the whole family loved them Yumm...

I have thrown out more food then I am willing to admit this week. My husband and 3 sons are not reacting well to some of the added food groups - like last nights black beans or aka 'rabbit turds' as described by one son who did not eat anything.

Biggest challenge is to keep them out of snacking because they refuse to even try what I prepared.

We do batch cooking and love it. We have been known to spend all day on Sunday just cooking huge batches of things we can use in different things later. We try not to have too much to put in the freezer, other than lunches as it makes lunches so easy to just pop in the lunchbox and haul to work, but I was always notorious for putting something in thre freezer and forgetting it forever.

We go to the farm for veggies every week. I am learning to measure again, my eyeballs do not do a good job of weighing and measuring food. I'm learning to track my food. I'm still not very good at it, but every attempt gets me closer to the goal.

On to week 3.

I did two batch cookings this week and enjoyed several meals from my cooking. I did attempt to cook a few chicken breast ahead to use in chicken salad and for soup.It was one of those days I was having a grazing attack. my five chicken breast soon became four chicken breast thankfully they were those frozen small chicken breast you get at Fred Meyer's in a bag.

I need to remember not to do big batch cooking if you are Hungary! i didn't buy any new kitchen toys but did find one i had put away in the basement that i thought i was at the Good well the steamed carrots were great! my cook book now contains several batch cooking recipes. Found my steamer i thought i had given to Good Well. steamed little potatoes we great. and my food budget didn't increase in fact i saved money must using the lesson of a master list from week one. anxious to start week 3. I have also added kitchen make over to my chore list to be done 1 time a month. besides learning healthy eating habits i am learning how to get organized in the Kitchen . Its true you are never to learn something or be reminded of things you already had learned and forgotten. this has been a great learning experience and I am looking forward to week 3

Week two is over and I did some big batch cooking two times this week. The left overs worked as another meal and some for lunch for DH and I. I love my slow cooker. It makes coming home from work easier knowing that there is a healthy meal waiting instead of stuffing my face with whatever I find out of hunger while I cook dinner.

a good second week did one batch cooking of chili and found 5 ideas of how to make something new out of the left over filling for potatoes on pasta in taco shells topping salad and make a taco salad found a chicken Noodle soup soup i want to try with the chicken left over from my chicken dinner on Sunday. the master list from week one is growing and has saved me time and money in the store. anxious to see what week has to offer.

So far so good. Have a freezerful of food!

Tomorrow for valentine's dinner, I'm making turkey meatloaf. Instead of baking it in the individual muffin pans as the recipe calls for, I'm baking them in individual heart-shaped muffin pans. Not much, but my little attempt at a heart-healthy and Valentiney touch for dinner.

Week 2 wasn't as difficult as I expected. In a way, I've quite often cooked in big batches and stored the remaining servings for future meals (mostly lunch the next day). Now I just carry things I've learned through Spark and make healthier meals to take to work (and accurate portions)!!

Week 2 started for me yesterday and is going well so far. I didn't big batch anything, but did cook very healthy breakfast and lunch and had popcorn for supper. I decided that the recipe I want to make over is one from my sister-Chicken Devon. I love that stuff, but have to modify it so that it's healthy. Instead of reg soup and cheese, I will use the ff or low fat/low sodium versions of the soup and low fat cheese. Then use on multigrain pasta instead of reg spag. I can use brown rice, too, but like the pasta better with mine.

Have asked a friend if she still has the dehydrator she had let me borrow before-I never used it so gave it back to her. She's checking and if she still has it will give it back to me to keep.
I also got some "fresh ideas" for some quick days eating from the list given in today's article.

Week 2 is going okay. There are only 2 of us and most of the "regular" recipes make enough for at least 4 servings, giving me something leftover to freeze anyway. We're living where we are temporarily and I don't want to pack the freezer really full since we won't be taking the food when we leave.

I already have a lot of kitchen appliances, but I'm thinking a rice cooker would be nice.

So far everything is going OK. I have many of the appliances already, thinking about buying a rice cooker, Big batch cooking is a challenge as I am normally only cooking for myself but I look forward to doing something that I can freeze and re-heat not sure what that will be though.

Week 2 has started out a little slow. I am getting over a bad cold that left me incapacitated over the weekend. Today though, I am feeling much better. I was looking over the kitchen appliances list SP suggests and am happy to report that I have most all of those kitchen helpers. As far as big batch cooking, I have already froze some left overs from my meals from last week. I will do the same this week since I will be cooking 5 more different recipies from the SP cookbook. So far, so good!!

My week 2 is not going so well. I met all the challenges but gave in to some sausage gravy and biscuits at church the other morning. I may have to not go to church when they are serving breakfast! I need to just eat it at home. I planned my meals all last week but some of it I didn't stick to. I am going to buckle down and get serious with this. I went Friday and had a Sauna rap and used the toning machines. I am getting moving again!

Having a good week 2. One of the challenges of big-batch cooking for me is actually putting my yummy food away instead of giving into the urge to have seconds. But as I am going out of town for the weekend, it's good that there are leftovers for hubby to enjoy!

Week 2 is going great!
I love to cook healthy and have been teaching myself for years by reading Prevention, Self & Fitness magazines. My husband bought me a very nice ($400) toaster oven for Christmas and I love it! I'm going to take the advise of one of the other members and get a rice cooker at Ross.

I have a big basket on my kitchen counter and I try to keep it filled with fruits and vegtables. I go shopping 2 times a week so my food is always fresh.

My daughter calls me a food snob! I look at food now and know all about it and just can't put it in my mouth. I like everything fresh and white rice and white bread is out of my diet for good!

I'd like to learn more about batch cooking though.

I love the accountability factors in this challenge! Just knowing this is what I'm supposed to be doing doesn't always help, but knowing there are others making this happen also is so much more fun! I have set aside a day, Mons. that is to be my menu planning and shopping day. Right now I'm working mainly on using leftovers alot, but someday I hope to be able to cook smaller meals, as it is just the two of us now. As empty nesters we are using leftovers at least half the week! Which is okay for the budget, really. Anyway, thanks so much for being here to help keep me on track! I'm also realizing that I do alot more housework than it seems like, when I really have to think about it. That's good for my self-esteem! emoticon

Wrote down my recipes, wrote out a shopping list, then couldn't bring myself to buy the stuff since I couldn't picture myself actually cooking it. Am going to try again on Friday night, to cook over the weekend. Hope that helps with my motivation!

I already do most of the tips for the grocery shopping. I make my list as I go and rewrite it several times so that I can keep it organized. My kitchen is pretty well stocked with helpful appliances and I don't have room for any more. I went to the store this week and bought some whole wheat flour so that i can start experimenting some. I do big batch cooking but my family is so big that it does not last. I look forward to cooking healthier and saving some money on groceries!

I already do many of the shopping suggestions, and big batch cooking doesnt really work in my house because my husband will only eat fresh food, I have many of the kitchen items listed except for the toaster oven, which I really want, but have no room for until we move to a bigger place.
I did chose to make 1 new recipe per week.
This week I chose Albondigas (Mexican Meatball Soup) It came out wonderful and 190 calories per cup. See photos of the soup on my blog titled "Week 2 Cooking Challenge with pics"

I've never been into Batch cooking so I'm going to go to my girlfriend for pointers on this one.

I have finished my grocery list early due to the fact that I am writing down what I need as I come across this during the day. I have quite a list !! I hope I don't spend more !
