Hi. My goals are:
1. Dinner at the table (vs. scattered) at least three times per week. (Unfortunately, varied schedules prevents a higher number)
2. Sparkpeople recipes on those nights.
3. Learn about one new food each week I can incorporate into my own recipes, or search through Sparkpeople. (Today's was quinoa.)
4. Refrigerator and cabinets full of healthy snacks available if hunger comes on suddenly.
5. 80% of all food entered on nutrition tracker BEFORE it is eaten, so quick changes can be made.

I'm in remission!) ... had no energy and couldn't stand long so I got used to eating a lot of carbs and "instant energy" foods ... time now to get ... and stay ... healthy!

My goals are to figure out how to properly plan meals for the week for my roommate and I. I grew up cooking for a family of 5 who all ate multiple servings at every meal and I have the hardest time trying to figure out how to properly plan how much food the two of us are going to eat in a week. I always buy too much and we can never eat it all.
I also want to try to cook healthier and cheaper. We spend so much on groceries that spend a lot of time sitting in our cupboards 'cause I don't know how to make it and keep it healthy and with our economic situation, we can't afford to do that. So I want to start making the foods we have in a healthier way and still have it be something we will both eat.
I've spent years researching how to do these things and still can't get it and sometimes I feel so overwhelmed trying to figure it out and I spend so much of my time trying to do so that I don't get other things I want to do done. I'm hoping to change this. It shouldn't take me days to figure out what we're going to eat and how to cook it. So I joined this challenge to see if I can do better.

The weather here in Idaho is snowy or rainy most every day but I am making my goal to cook on my wood fire BBQ or in a Dutch oven at least once a day using meal plans from Chef Megs recipes and adapting it to the outdoors with the foods in the freezer, pantry, and frig. I have kept fresh veggies and fruits in the house every day.

Of course I found this team AFTER my sister and I stocked our kitchen with what we HOPE are healthy choices. But my goal for this week is use the spark recipes to help me cook with what we have this week and make a full weeks meal plan based on what we already have in our pantry.

I cook all my meals at home except Friday nights. That's our night out because I'm tired and have run out of ideas for the week. I want to learn new, healthy recipes and like a few said to eliminate waste. I will soon be getting fresh fruits and veggies delivered every week straight from the farm (have been doing this the last 2 years) and need some different ideas on how to prepare the vegetables. emoticon

My goal is to cook at least 3 times per week (S-M and Thurs.), making enough to have leftovers for lunch the next day. I plan to cook with fresher ingredients (from scratch) and opt for whole grains as opposed to using processed foods (eg. bleached white flour or white rice that has been hulled). emoticon

it is harder to eat healthier because it requires planning. when i came back from water exercises i planned to have beans and veggies.
the beans were not totally cooked. so hubby had a bowl of cereal, and i had a tuna sandwich with lettuce and cooked cauliflower.

tomorrow beans. try to get some good cookbooks. then you can plan your shopping and meals around that.

i like quiche because you can make it the night before and have a nice breakfast and or lunch the next day. just warm it up in the microwave. just use skim milk and low fat cheese and whatever veggies you have.

I have already started to eat healthy for about a year now (come April).

As months gone by, I've gotten better and better at it. However, after hurting my Achilles I've been reading a lot about nutrients. I want to try to start eating the -correct- portions of things that are good for my body, not just eating healthier foods. I also want to attempt to start making more of my own meals, in particular Breakfast and Lunch.

I've been eating the same old things for lunch because healthy (and inexpensive, and quick) meals aren't easy.

1.More nutrients, better balanced meals
2. New meals/recipes
3.Maybe a goal of 1 breakfast meal (homemade) and 1 lunch (homemade) meal a week. I'm pretty lazy when it comes to making anything (especially if it's more complicated than a sandwich) so this is prob all I should shoot for.

My goals are to plan and prep meals for the week on the weekend to make cooking healthier meals quicker, and so I am not tempted to make an easier, less nutritious meal. I would also like to make over some of my meals to make them healthier. My ultimate goal is for my husband and children to love healthier meal options KNOWING that it's healthy.

My goals are to change the foods we are eating to more home made and less processed foods. Also I realised after making a menu for a few weeks that I need quick and easy healthy recipes so that we actually cook instead of going out. Leftovers would be nice to have around as well because I am not good about getting up early enough to prepare a meal to take work.

Just started today, I have made my menu now I need to figure out my grocery list. I have tried doing menu plans before but I have trouble sticking to it when it's time to cook. I tried to make sure that my recipes were not too complicated because I think that I often burn out when I try to cook often. So my goal for this week to successfully buy groceries (without blowing my budget) and sticking to my plan!

I have completed the steps for week 1. Now, the challenge is to implement those meals. I am making a list of my daily meals today and will prep all the vegetables. I have put reminders on my phone to take meat out of the freezer the day before- I always forget to do that! I bought some dates to cover any upcoming "sugar attacks". I like dates, but have no interest in eating too many...two or three are my limit. Even though dried fruits are high calorie, I figure this is a good sweet choice. Here we go!

Start Saturday... will plan a menu

1. Have been taking my lunch to work and measuring out portions

2. Finding power foods that I like eat and prepare a meal with them, so that I won't be hungry. I needs to coat my stomach.

3. And stop stressing over what food to eat and no late night snacking,

4. Eat healthier snacks

5. To be fit and healthy

Starting Week ! of the Challenge. My goals for this week are

1.) Pack my lunch and snacks for the next day before I go to bed, so that I don't skip them because I am rushed.

2.) Do a proper "Mise en Place" for dinner prep -- getting stressed out while fixing dinner makes me more likely to "taste" my way into extra calories or gobble my meal and then want to snack later.

3.) Break down my shopping list into reasonable daily batches so that I don't wind up skipping something that I need because it is too much to carry on the day that I need to shop for it.

My goals this week are to
1. eat a home cooked meal for dinner every night.
2. exercise 6 nights (run 1.5 miles 4xs and Jillian Micheals 30 day shred DVD 2xs).

Saturday will be a challenge for me. I would like to take my two daughters to the movies. however, it will be hard to not eat any snacks during the movie or eat out.

I want to make healthy meals for dinner and pack a lunch to work so that don't end up eating food that I don't want to eat. The work that I do is in the kitchen so it is pretty challenging.
