I want to learn to cook healthy simple and quick meals that my spouse will enjoy too. Too often I go to the quick box mixes despite knowing that they aren't as good for me.

This challenge is perfect for me. I need to snack a lot less and make real meals. I would like to create a menu, a master shopping list, and stop wasting food. Having meals planned out will help me stay in my calorie range. I would also like to eat more protein and fruit.

Week one goals (so far)

1. Clean kitchen, top to bottom
2. Organize recipes tossing those that I don't use or that I can't make over to make healthier
3. Make 1 or 2 new recipes per week.
4. Keep one fruit salad and one vegetable salad made all week.
5. Plan menus. I used to be pretty good at this. Dinner one night would be lunch another day. Got lazy.
6. Drink water

My goals are to try one new recipe every 2 weeks (or more) and to cook a healthy dinner at least 4 times a week. Usually my mom cooks, but I would like to start learning how. Plus this way my family sticks to my healthy eating habits.

My kitchen is clean, stocked, and ready to go!

My goals are to premake elements for quick, healthy meals and freezing them in 1-to-2-portion-sized containers.

I also bought 2 sizes of canning jars to add to my other sets of pyrex glass storage containers for my leftovers. I cook a lot already, so it's just making things convenient for future meals when I'm already in the kitchen that I'm shooting to get figured out.

I've been using up the food in my freezer and frig (healthy stuff) and went shopping to restock for the month except for produce, milk & eggs.

The first step in getting somewhere is by deciding not to stay where you're at.

I started on Sunday by cleaning my fridge, (I mean sparkling clean), and throwing out all of the chocolates, chips and other tempting and fattening foods. Then restocked the next day. I also cleaned the stove until it was shining and the pantry too! I want to make the kitchen a wonderful, beautiful place where I feel inspired to cook and create!
I've been trying to make a soup from scratch every other day, and keep a salad in the fridge at all times, (as well as a homemade fruit salad for breakfast)! Also, to get in the mindset of pulling out something for dinner the night ahead. It's been a great feeling to be back in the kitchen creating and making healthy delicious food for my family!
I'm thinking in the next few weeks I'd like to finally finish curtains for my upper shelves in my kitchen as well...it seems trivial, but like I said, I just want to make it a beautiful, magical space!

Hi there!

I joined this challenge because I really need to spark some creativity in my meal & snack planning. I'm vegan and it is too easy to slip into not eating veggies or fruit. So, I want to focus on coming up with new favorite recipes and get both my husband and I out of our meal rut.

I've cleaned out my kitchen and stocked my pantry full of quick, vegan staples so that I can make easy meals on busy nights.

I'm really excited about this challenge!

Impossible standards just make life difficult.

Weight loss is a lot like hiking. Instead of looking up at the top of a hill/mountain and thinking I won't be able to do it, I just keep my eyes 5 ft. ahead of me and eventually, I'll make it to the top! Just like weight loss, if I look at the 66 pounds I need to lose, it is overwhelming. I'm just going to concentrate on 10 pounds at a time. Before I know it, I'll reach my goal!

My goals for this first week of the challenge will be to work over some of my favorite recipes to make them healthier. I will plan my meals & grocery list for the week with that specifically in mind. Plus, I am open to trying new recipes. While I do sometimes fix certain foods that I alone will eat (like making something that I know my family won't like....so I freeze serving sized portions of it), my over-all goal is always to find recipes (or recipe make-vers) that I know my family will eat.

week one challenge goals:
my main goal is to cement the habit of cooking at home and rethink some of my practices so that in the summer when my business is open and we are extremely busy here--we don't opt to eat out instead just for convenience sake. we eat out way too much and its time for that to change.

focus on the parts you get right.

I cook at home most days but failing to plan there fore I might grab the first thing I see when I open the cabinet or refrigerator door. So, my goals are:

1. To plan healthy menus for the entire week so I don't go into the kitchen hungry and unprepared.

2. Eat less processed foods.

3. To eat more vegetables.

If your not part of the solution, you are part of the problem.

So I am a college student who has little experience in the kitchen. When I first got married and started living on my own. The idea of cooking something was frightening so if it wasn't hamburger helper, it was always fast food. Obviously, that took a toll on my health. Now, I've decided it's time for a change. It's now Christmas break and I have MUCH more time to experiment with different recipes.

Goals

1.)I want to become a better cook. Perhaps, my husband will want to eat my food now!

2.)I want to become a faster more efficient cook. When I go back to school, I'll be able to prepare healthy meals at a much faster pace. For me, time is everything.

3.)I want to learn how to make healthy substitutions to help cut down the calories in the foods that I like to eat.

I made a plan for food for the next two weeks. Since it is the week before Christmas I marked all the Christmas parties and planned lower calories meals that day because I know realistically I will go over on those days. As much as I hate repition but to keep groceries down I am going to rotate the same meals. I keep telling myself it's only two weeks then I can change it up again.

Goals for this week:
1) Plan meals based on calendar
2) Eat at home all week except for the Christmas functions already on the calendar
3)Try new recipes (hooked on Hungry Girl cookbooks)
4)Track everything I can. Something should be in my nutritional tracker every day this week.

This is day one of challenge week one. I *understand* how to eat well, but I've always been lucky to have low cholesterol & BP and be in relatively good shape. Hitting middle age and now I need to think more about eating. Plus, my husband and I have gotten lazy and often opt to eat out instead of trying to cook after work.

My goals for this week are:
1. Eat at home at least 3 nights this week.
2. Batch cook some of those foods to provide for healthy lunches.
3. Increase the FIBER in my diet - I, apparently, get very little (according to my food logs on SP)

Good luck to all who are endeavoring on this challenge. emoticon

What recipe did you make? I have almost 15 & almost 16 year old boys and a meat and potatoes husband. Tofu and lentils are not options.

My goal for this challenge is to try 1 new recipe each week. We are well on our way to eating healthier but there's always room for improvement. Getting my family to eat healthy will go a long way towards helping me eat healthy.
