My first goal is to figure out...and stick...to meal planning.
My second goal is to go through my pantry and find things I need to get rid of and pack them up for a local food pantry. The rest of the opened stuff...like the white rice, for example, I'm trying to use up; I can't stand the thought of throwing it away/the wasted money. That's just an example. It won't take too long to do that.

I already prepare most every meal at home as it is (though breakfasts are usually a very simple affair for my kids, and we make lunches the night before), though we do go out once in a while (usually special days or if it's convenient because we are no where near home).

I would like to learn hints & tips to create healthy meals in less time! Stir fry is already a family favorite. I usually cut up the veggies myself but, to save time & energy, I have sometimes used the precut ones from the grocery!

I just had a (long overdue) knee replacement and started eating clean / whole30 about 2 weeks before surgery...I felt great and lost about 10 pounds before going in...hospital could not comply 100% but I did the best I could for the 3 days I was in hospital and now have resumed and am loving this new "diet". Looking for fresh, good clean recipe / meal ideas and any other helpful hints you all share! Have a great day everyone!

My goal is to prepare at least one, if not two, hot, home cooked meals evey day. I don't plan meals a week ahead, but I do know what the protein will be for the evening meal every day before the coffee is done brewing (and turning on the coffee maker is the first thing I do upon waking).

I used to enjoy cooking and baking so much and I miss that. My goals are to get back to cooking meals with the girls and to make them healthier meals! I'd also like to streamline things to be more efficient in the kitchen. I can see problems with this one though because I have an adult son and girlfriend who live at home who do not contribute to any kitchen cleaning at all AND my oldest daughter puts away dishes for me and does an atrocious job of it. We're working on it, but I'm so tired of having to look in every cupboard and drawer and check inside every pot/bowl/container to find where she's thrown lids and utensils.

I need to get back in the groove of cooking for my husband and I more often like I used to. I moved and I haven't found my spices or all of my cooking utensils yet, but I'm going to try real hard to cook 3 dinners at home this week.

My goal is to cook all 7 days. I cook most nights, but life gets hectic with 4 kids in different activities and sometimes I slip and choose easier ways like pizza or fast food which does none of us any good. I need to plan my busy nights accordingly and either start dinner earlier or enlist one of the teens or my husband to chip in.

I joined this team yesterday with the goal of not only planning my weekly menus but following the plan. I have a well stocked freezer with meat and vegetables and I plan to make my menus appropriately. I plan to use at least one new recipe each week and try to make over my favorite recipes.

One problem already is that I don't quite understand how this challenge works. I do like the challenge format with the calendar and daily tasks which this challenge is not. I tried another challenge like this one but was unable to figure it out so I didn't get to complete any of it. I hope this one goes better.

Hi Everyone, I can tell you which recipes that I made and enjoy. Hoping that you will find them just as good. Salsa Turkey Burgers, juicy and surprisingly delicious. Spinach Stuffed Salmon. I didn't stuff the salmon because I had frozen pieces of 4 oz. I put the spinach mixture on top of each one. That was very good too. The Garlic Brown Sugar Chicken was good too. I hope that you all will try these recipes and let me know it you too enjoyed them.

Just started this challenge to help me plan my healthy meals and snacks for at least five days a week. What is the secret to doing this? I have dinner out or at boyfriend's 2x a week at least. have two dinners with my elderly parents and don't know what they have to cook until I get there. But I can have oatmeal with nuts and fruit for the two breakfasts and plan and take food for the first dinner and my lunch and snacks.

I think its great to be able to wake up in the morning and know exactly what your going to eat. Same for the rest of the meals. There is only two of us. Most of the time my husband does eat the food that I do so I have many meals ready on hand. Makes it easier for me. I take care of my husband who is suffering from early dementia and eats very little.

I have kept my fridge cleaned out. No unhealthy stuff in there. I have plenty of room for the healthy fruits and vegetables along with fish and chicken. We are enjoying our good eating plan. The crock pot has been a nice addition to some of the meals I prepare, as you indicated - no thinking what to eat at the last minute. Thinking ahead is the smart thing to do.

I used my crock pot to make oatmeal cereal for three mornings. Now I don't have to think about what I will have cause its already made. Same with making three peanut butter banana wraps.

My goal for this challenge is to have a healthy dinner planned for every night, with a couple of quick meals ready for days when my schedule unexpectedly changes.

I seem to lose energy and motivation in the late afternoon so if I haven't planned ahead or if something unexpected comes up I am very tempted to resort to takeout.

I need to use more of my resources - crockpot, prepping ahead, well stocked pantry - and keep them organized.

I want to get back to healthy cooking using real ingredients. I plan to cook at home five times each week. I will take leftovers from home for my lunch at the office.

Joined the Healthy Cooking Challenge. I make healthy choices on the fly but it's easier to order out when I don't plan. It's a vicious cycle and the scale isn't moving. Week 1 meal prep. Printed the Weekly Grocery Shopping List found recipes using Spark & Pinterest and I am ready for the week; breakfast; lunch and Dinner! This week's goal is to stick to the plan & make my husband stick to it too.

My main challenge is to keep my sodium below 2500 since I have high blood pressure. So far so good.

I tried the same thing, cooking a new meal each week. To my delightful surprise the salsa turkey burger was delicious.

I want to maintain my interest in healthy new recipes, have a challenge to myself for at least one new recipe a week.

I don't think about the why's or what for's I just do it. In this way I can follow my recipes that I have chosen and am very happy and satisfied.

I do a lot of the week one items, my problem is the energy to actually do the cooking when the time comes. I need to strengthen the good habits I already have and figure out how to bust the cooking inertia.

I had a friend tell me that she sets up the cooker the night before, hers has the removable crock, and puts the crock in the fridge, then the next day she just puts it in the cooker. Definitely going to try that!

That's a good idea. Some people set the cooker before they go to bed. I for one do not like that idea. Setting it up between breakfast and lunch is better for me. I'm retired.

Thanks Harriett14, I do cook extra and use the leftovers for lunches. I've just started trying to use a slow cooker but I find that I often forget to set it up and then "poof" it's dinner time. I'm going to try setting reminders on my calendar.

When I cook I cook recipes for four or six people this way I don't have to cook everyday. Using a crock pot makes meals easier. Perhaps you would like to try that method.

I've gotten better at meal planning but struggling with actually cooking it. I've tried to pick simple/easy meals and leaving a night or two empty for wiggle room but I lack the motivation to actually do it.

My husband has some things wrong with him and one of them is lack of appetite. That has not stopped me from food shopping. My freezer was a mess and I didn't know exactly what was in it. I bought some open trays, took everything out shelf by shelf and entered them on Excel, printed out the sheet and put it on the door of the freezer. Now on to the freezer in the refrigerator. Its so much easier to prepare when you know what you have.

I am going to cook up some different types of dinners this week such as apple stuffed acorn squash and layered Mexican dip. I know that it's a dip but I'm going to eat it as a salad leaving out the tortilla chips.
